MINI BREAKFAST BAGELS

These are great to serve with drinks and are so simple to make. If your guests are hungry you can always serve whole bagels topped with the curd cheese and salmon.

Number Of Ingredients 7
Steps:
- Put the bagels on a cutting board and vertically slice into little rounds, across the diameter. Mix the curd cheese with some finely chopped chives, the lemon juice and black pepper. Taste and adjust the seasoning and lemon. To assemble, spread each piece of bagel with the curd cheese, place a twist of salmon on top, sprinkle with some freshly cut chives, and finally add a drizzle of the best extra virgin olive oil you can afford.

- Step 1Preheat oven to 350° and grease a large baking dish with cooking spray. In a large bowl, beat eggs and milk until light and frothy. Set aside.
- Step 2In a large skillet over medium heat, cook bacon until crispy. Remove slices from pan to drain on paper towels. Pour out most of bacon fat but leave about 1 tablespoon in the skillet.
- Step 3Pour egg mixture in skillet then immediately turn down heat to medium-low. Stir occasionally with a spatula or wooden spoon. When the eggs are nearly set, season with salt and pepper and stir in chives.
- Step 4Spread cream cheese onto the bottom halves of the bagels then place in greased baking dish, side by side. Spread egg mixture over bagels then crumble cooked bacon on top.
- Step 5Bake until the bagels are toasty and the cheese has melted, about 10 minutes. Serve warm.

- Preheat the oven to 375F. In a large bowl, combine the yogurt and the self-rising flour. Using your hands, mix the ingredients until you have a mostly smooth dough.
- Using a dough scraper or knife, divide the dough into four equal pieces. Lightly flour your working surface. (I HIGHLY recommend using a Silpat mat for this.)
- Working with one piece of dough at a time, roll the dough on the mat in a back and forth motion until you have a rope about 5-6” in length.
- Place the dough onto a baking sheet (I use these USA baking sheets) and shape into a bagel, wrapping each end over the other and tucking the ends underneath the bagel.
