NO-WASTE TANGY MUSTARD MARINADE
This recipe puts a new twist on our economical dressing-in-a-jar idea. Whip up a tangy marinade using the bit of mustard at the bottom of a jar. (We chose whole grain, but Dijon works just as well.) Toss in a few pantry staples, and shake the container. You'll have enough to coat two chicken breasts or one pork tenderloin.

Steps:
- Combine about 2 tablespoons mustard with juice and zest of 1/2 lemon, sage, garlic, extra-virgin olive oil, and honey. Season with coarse salt and freshly ground pepper; shake well. Use to marinate chicken or pork, and let stand, covered, for 1 hour. Roast, broil, or grill the meat (wipe off marinade before grilling).
MIRACLE MARINADE
I just got this one in e-mail. If it really does tenderize those cheaper cuts of meat then it is truly the miracle it claims to be.

MIRACLE MUSTARD MARINADE
This recipe was originally for grilled asparagus but I've used it on lots of other things, changing the herbs used in some cases. Some suggestions: salmon (dill), chicken (rosemary or tarragon), pork (tarragon).

MIRACLE WHIP HONEY MUSTARD SAUCE/DRESSING
I have made this dressing/sauce for years and decided to post. Leave out the horseradish if dressing used for salads, put in if used on top of grilled or baked meats. Brush on grilled pork or ham. Garlic in the recipe is also optional. I like it for both uses.

- In a medium metal bowl, mix whipped honey, mustard, white pepper and garlic and horseradish. Use a whisk and mix briskly to blend well.
- Add Miracle Whip and whisk again. Wipe whisk, cover bowl and refrigerate. The longer it is refrigerated, the more intense the flavor. Taste. If the flavor is too intense for you add 1/2 tsp evaporated milk and stir. Taste. Repeat the process if needed. Some times I use a Homemade Miracle Whip recipe if I have time.

Note - if you are sensitive to heat and spices, you may wish to initially halve the amounts of chili garlic sauce and sriracha, taste, and work up from there if desired. To make the grilled chicken that is shown, add 1 to 1.25 pounds boneless skinless chicken breast tenders to a large ziptop plastic bag, add the Spicy Garlic Mustard Marinade, 2 tablespoons olive oil, seal the bag, squish contents around to distribute the marinade evenly, and place bag in the refrigerator to marinate for at least 30 minutes, or up to 24 hours.
