MISS BROWN'S HUSHPUPPIES TWO WAYS
Whenever I have a fish fry, I have to have hushpuppies on the side. These are served with honey butter, but they are also great with tartar sauce. If you're a purist, I've included a plain version in addition to a fun Low Country twist with fresh okra in the batter.

Steps:
- For the hushpuppies: Pour enough oil to reach 3 inches up the sides of a Dutch oven. Heat the oil to 375 degrees F.
- Combine the cornmeal, flour, House Seasoning and baking powder in a medium bowl. Pulse the onions in a food processor until finely minced. Add to the cornmeal mixture and stir to combine. Add the egg and enough buttermilk to moisten into a batter. Separate half of the batter to another bowl, then stir the okra into one of the batters. (Make sure the batter isn't too thin. It should hold its shape when scooped out with a spoon.)
- Arrange some paper towels in a baking sheet and place a wire rack on top. Working in batches, drop heaping teaspoonfuls of each batter into the hot oil using a cookie scoop coated with nonstick cooking spray, and cook until golden brown, 2 to 2 1/2 minutes depending on the size (see Cook's Note). Drain the hushpuppies on the wire rack.
- Meanwhile, make the whipped honey butter: Beat the butter and honey in a bowl with a hand mixer at medium-high speed until light and fluffy. Season with salt. Serve with the hushpuppies.
- Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl. Store in an airtight container.

Steps:
- In a deep saucepan, pour enough vegetable oil to come about 2 to 3 inches up the side of the pan. Heat oil to 365 degrees F.
- In a mixing bowl, combine cornmeal, egg, water, milk, sugar and salt with a whisk, whisking until just blended. Working in batches, drop batter into oil a tablespoon at a time, taking care not to overcrowd the pan and bring the oil temperature down too much. Fry hush puppies until cooked through and golden brown, about 2 to 3 minutes per batch. Remove from the oil and drain on paper towels. Let oil return to 365 degrees F between batches.
MISS LAVERNE'S LOUISIANA HUSH PUPPIES
This recipe was shared with me by my dear, now-deceased, mother-in-law. Fish fries are a popular tradition in Louisiana where she hailed from, especially in the fish camps around the many lakes and reservoirs there. In order to have enough hush puppies to feed the crowd of people attending the frequent community get-togethers,...

Steps:
- 1. AFTER YOU HAVE FRIED YOUR FISH, MAKE SURE OIL IS AT 350 DEGREES F.
- 2. IMMEDIATELY BEFORE FRYING, IN A SMALL MIXING BOWL, MIX ALL INGREDIENTS TOGETHER, DO NOT REFRIGERATE OR LET SIT FOR ANY LENGTH OF TIME, THE MIXTURE WILL THIN AS IT SITS. DROP BY TEASPOONFULS INTO HOT OIL . TURN FREQUENTLY DURING THE 3-5 MINUTES OF DEEP FRYING. TEST FOR DONENESS BY REMOVING ONE FROM THE HOT OIL AND BREAKING IT OPEN. IT SHOULD BE MOIST BUT NOT UNDONE. DRAIN ON PAPER TOWELS. SERVE HOT.
ALMOST-FAMOUS HUSHPUPPIES
Ironically, one of the most popular dishes at the seafood chain Long John Silver's is a landlubber one: hushpuppies. The deep-fried cornmeal snacks gained a cult following soon after they debuted in 1977, and although two pups still come with every entrée, many diners end up ordering more on the side to get their fill. The recipe is a secret, but Food Network Kitchens created a perfect copy so you can make them at home. Beware: This recipe makes 30. Try not to eat them all at once.

Steps:
- Combine the onion, flour, cornmeal, baking powder, salt, sugar and onion powder in a bowl. Whisk the egg and milk in another bowl. Whisk the egg mixture into the flour mixture until smooth. Cover and chill 30 minutes.
- Heat 2 inches vegetable oil in a large pot over medium heat until a deep-fry thermometer registers 350 degrees F. Working in batches, carefully drop heaping tablespoonfuls of batter into the hot oil. Fry, stirring occasionally, until golden, about 8 minutes per batch (return the oil to 350 degrees F between batches). Transfer to a paper towel-lined baking sheet using a slotted spoon. Sprinkle with salt. Let rest a few minutes before serving.
MISSISSIPPI CATFISH AND HUSHPUPPIES
Steps:
- Hushpuppies: Mix first 6 ingredients in mixing bowl. Add buttermilk as needed until batter reaches a thick, mashed potato-like consistency. Refrigerate for 45 minutes to 1 hour before using. Heat peanut oil to 325 degrees F. Using 2 teaspoons to drop the batter, dip the first teaspoon into water and then fill with hushpuppy batter. Use the other teaspoon to rake the batter into the oil. Cook for approximately 4 minutes until golden brown. The hushpuppies should roll over in the oil by themselves. If they do not, you may have to turn them.
- For the Catfish: Put first 6 ingredients into a large brown paper bag. Roll down the top and shake until well-mixed. Cut catfish in half lengthwise. Pat dry with paper towel. Mix milk and hot sauce. Dip catfish in milk bath, put in paper bag with breading and shake until covered. Place catfish into pot with about 4 inches of peanut oil heated to about 325 to 350 degrees F. Cook until brown and firm, about 6 to 7 minutes.
DENISE'S LOUISIANA HUSH PUPPIES & FRIED CATFISH
These hush puppies have a cake like consistency (not your little ball of dry cornmeal). This is my base recipe, but it can be altered to your own taste, such as less sugar and more jalapeño. The catfish recipe is my husband's, and is more of an ingredient than a recipe, but this is our most requested meal when we're having friends over, so I thought I'd add it. I usually also serve with french fries, onion rings and fried mushrooms. Not the most healthy meal in the world...but oh, so good.
