MIXED-BERRY BUTTER CRUNCH PARFAITS
Enjoy these layered mixed berry parfaits made using Fiber One™ cereal and Yoplait® Original yogurt red raspberry - a delicious dessert.

- Heat oven to 400°F. In large bowl, mix flour, brown sugar and pecans. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture is crumbly. Stir in cereal and coconut. Spread in ungreased 13x9-inch pan.
- Bake 15 minutes, stirring once. Remove from oven; stir and cool 10 to 15 minutes.
- In each of 6 parfait glasses, layer 1 to 2 tablespoons cereal mixture, 1/2 container of yogurt and 2 tablespoons berries; repeat layers. Top each with 1 tablespoon cereal mixture. If desired, garnish with additional berries. Store remaining cereal mixture in refrigerator.

MIXED BERRY AND YOGURT PARFAIT
Making your own granola is easier than it looks, and it will add a nice touch to this quick and easy parfait.

- Fill a small single-serving (6 ounce) container with a third of the yogurt. Top with a third of the berries. Drizzle 1 teaspoon of maple syrup over the berries. Repeat two more times with the rest of the yogurt, berries and maple syrup. Pack the granola separately so that it can be mixed into the parfait when ready to eat. Pack the parfait with an ice pack or frozen juice box so that it stays cold until lunchtime.
- Heat an oven to 350 degrees F.
- Heat the maple syrup with the coconut oil in a small skillet over medium-low heat, just to melt the oil. While still warm, toss the maple syrup mixture together with the oats, almonds, sunflower seeds and a pinch of salt in a medium bowl. Spray a baking sheet with the nonstick cooking spray. Spread the granola on the sheet tray in a thin layer. Bake for a total of 20 minutes, tossing the granola halfway through. Let cool to room temperature and store in an air-tight container in the refrigerator for up to 1 month.

- In a small bowl, mix Greek yogurt and maple syrup until well mixed. Mix 1 teaspoon of maple syrup per 6 ounce serving of yogurt.
- Layer yogurt and selected parfait add-ins in a small mason jar or sealable container. I like to do two layers each of yogurt and add-ins, as pictured. Top with granola.
- Store in the refrigerator and eat within 1-2 days. You can also wait to add the granola until the night before, or right before eating, for maximum crunch. In that case, the parfait should be consumed within 4 days.
