SOFT ORANGE MOLASSES DROPS
Orange juice and peel add a slight citrus twist to ordinary molasses cookies. I've also stirred in some chopped nuts, raisins, prunes and apricots.

- In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda and spices. Combine the molasses, orange juice and zest. Add dry ingredients to the creamed mixture alternately with the molasses mixture, beating well after each addition. , Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 10-12 minutes or until edges are set. Remove to wire racks to cool completely. , For glaze, combine confectioners' sugar and enough orange juice to achieve desired consistency. Spread over cooled cookies.

- Heat oven to 375 degrees. Line 2 baking sheets with parchment paper; set aside. In an electric mixer, use the paddle attachment to combine butter and brown sugar; mix on high speed until fluffy, about 2 minutes.
- Add egg and molasses, and mix on medium speed until combined, about 20 seconds, scraping down the sides of the bowl once.
- In a medium bowl, whisk together flour, baking soda, and salt; add to butter mixture. Mix on low speed to combine, 20 seconds.
- Using 2 spoons, drop 2 teaspoons of batter on a baking sheet; repeat, spacing them 3 inches apart. Bake for 5 minutes. Sprinkle tops of cookies with granulated sugar, rotate sheets between oven shelves, and bake 8 minutes more. Rotate sheets again and bake until cookies are just brown around the edges, about 6 minutes more. Slide parchment with cookies onto a wire rack; let cool for 15 minutes. Store in an airtight container.

- Preheat oven to 375 degrees. Whisk together flour, baking soda, cinnamon, salt, ginger, and cloves. Whisk in brown sugar. Stir in melted butter, molasses, milk, and egg. Fold in candied orange peel.
- Roll 1 tablespoon or 1/2 teaspoon dough into a ball. Roll in sanding sugar, and transfer to parchment-lined baking sheets. Repeat with remaining dough. Chill in refrigerator for 5 minutes. Flatten each ball with the bottom of a glass. Bake for 12 minutes. Transfer cookies to wire racks, and let cool.

COCOA-MOLASSES DROP COOKIES
This recipe was part of a few hundred recipes my Aunt had collected from friends and family over the years. It caught my attention because I questioned how chocolate and molasses would team together. As I finished the dough and tasted it I knew I had come across a very unique and wonderful combination. I couldn't wait until they were baked. They were even better. Try adding a vanilla glaze to the top of the cookies and pipe it on in thin lines. It makes them pretty and even tastier!

- Heat oven to 375°F.
- Cream the butter and sugar together until it is light
- Add the molasses and egg; beating until the mixture is smooth.
- Add the baking powder and the cocoa to the creamed mixture; then add the flour.
- Pipe the mixture onto a greased cookie sheet in mounds a little larger than a quarter.
- Bake 9 minutes or until set.
- Cool slightly; remove from cookie sheet to wire rack. Cool completely.
- Drizzle a Vanilla glaze in thin lines over the top of each cookie.
- For Vanilla Glaze: Stir together 1 cup powdered sugar with 2 tablespoons milk in a small bowl until mixture is smooth and of drizzling consistency. Stir in 1/2 tsp vanilla. Makes ½ cup.

SOUR MILK MOLASSES DROP COOKIES
Another way to use up that milk once it turns. The result is a pillowy soft cake-like cookie with a delicate molasses and spice flavor. If milk never turns at your house, the you can make your own by placing a tablespoon of vinegar in a measuring cup and filling to level with milk. Let that sit for 10 minutes and you have soured milk.

- Beat together the sugar and shortening until the sugar crystals have begun to break down, about 2 minutes. Beat in the egg and molasses until just combined.
- In a smaller bowl mix together the flour, baking soda, cinnamon and cloves.
- Mix the dry mix and sour milk into the wet bowl in alternating thirds. Fold in raisins, if using.
- Chill the dough for two hours or more.
- Drop by rounded tablespoons onto an ungreased baking sheet. Bake at 400 degrees for 11 minutes.
- Remove from oven an place on a cooling rack. Allow the cookies to cool and dust with powdered sugar.
- Note: For best results allow your baking sheet to fully cool before using between batches.
