MOLASSES NUTTY BARS
My grandma and I used to make these cookies when I would go to stay at her house in the city for a week in the summer. They were so good, especially when we would make them together. I got to grease the pan, grate the orange, chop the nuts and break the eggs in the bowl.

- 1. Crust: In a bowl, mix all dry ingredients and cut in butter with pastry blender until crumbly. Spread crumbs evenly in a greased 9 x 13- inch baking pan- pressing in firmly. Bake in 350^ oven for 10 minutes.
- 2. Filling: In medium bowl, beat eggs until foamy. Add flour, sugar and molasses. Beat only until mixture is smooth and well blended. Stir in nuts and vanilla. Pour over crust. Bake 20 minutes or until top is firm to the touch.

- In a large bowl, combine butter, 1 cup sugar and molasses. Beat in egg until smooth. Combine flour, baking soda, cinnamon, cloves, ginger and salt; stir into the molasses mixture. , Spread into a greased 15x10x1-in. baking pan. Sprinkle with remaining sugar. Bake at 375° for 10-12 minutes or until lightly browned (do not overbake). Cool on a wire rack. Cut into bars.

MOLASSES OATMEAL BARS

Steps:
- Preheat oven to 350°F.
- Spray 8 inch square baking pan with nonstick spray and set aside.
- With a whisk or electric mixer, beat together brown sugar, spices, molasses, oil and egg.
- In a separate bowl, combine flour, oats and baking powder.
- Add to molasses mixture; stir until blended.
- Spread in baking pan.
- Bake for 18-20 minutes or until a toothpick inserted in centre comes out dry.
- Cool on wire rack.
- Cut into squares.

- Grease a 9x13 pan and preheat oven to 350F Cream shortening and sugar until fluffy Add beaten egg, coffee/water and molasses.
- Mix well.
- Sift together dry ingredients and add to wet.
- Mix well Pour into pan and bake 25 minutes.
- While still warm sprinkle w/ confectionary sugar or glace with a thin icing.

- Cream the butter and the sugars then add the egg.
- Combine the milk and molasses and add to the dough.
- Sift together the flour, soda, salt and spices and slowly stir inches.
- Bake in an ungreased 13x9 pan for 25 minutes in a 300 degree oven.
- Do not cut into bars until cool - they will crumble and break otherwise.
