MOM'S PIE CRUST
The very first thing I learned how to cook! This freezes beautifully; no well-equipped home is without a ball of pie dough in the freezer! Guaranteed to roll!

Steps:
- Combine flour and sugar into the bowl of an electric mixer. Cut butter into tablespoon pieces; add it to the flour and butter. Use the paddle beater to cut the butter and flour together. Alternatively, this can be done by hand with a pastry blender.
- With the mixer on low speed , or while stirring the mixture with a fork, pour in the cold water. When the dough starts to clump, and before it turns into a ball, stop stirring.
- Lightly knead dough in the bowl until it forms a ball. Divide dough into two parts. Flatten each part into a disk, and chill for about 30 minutes before rolling.

MOM'S PIE CRUST COOKIES
They are moist and tender--not the kind that turn into a dried out lethal weapon in 3 days. They are a BIG hit with our overseas service men. Just pop some popcorn and pack them in it.

Steps:
- Mix all dry in a LARGE BOWL.
- Cut shortening into dry till fine and crumbly (use your hands for this).
- Mix all wet together and add to dry. Mix with wooden spoon till dough forms. Dough will be soft.
- Roll out on well floured surface (I use equal parts flour and sugar) to 1/4 inch thick. Cut into shapes.
- Place on lightly greased sheet and bake at 350°F for 8-10 minutes. Do not let cookie bottoms BROWN AT ALL.

- Preheat oven to 350 degrees. Line a baking sheet with parchment paper or use silpat. On a slightly floured surface, roll your pie crust into a large rectangle. Roughly a 10 x 8 or so. If you are using scraps of pie crust, roll into the size rectangle you can.
- Mix together sugars, cinnamon in a small bowl. Brush pie crust with butter, you just want a thin layer of butter on the crust. Sprinkle cinnamon mixture evenly over pie crust (you may not need the whole amount depending on how big your crust is)
- Roll you pie crust as if you were rolling cinnamon rolls. Slice into ½ inch to 1 inch thick pieces. Place on baking sheet and bake for 8-10 minutes or until pie crust is just about finished.
- Allow to cool completely before serving. Drizzle a little bit of a sugar glaze on top ( mixture of confectioners sugar and milk- adding milk or confectioners sugar until desired consistency)
