MONSTER SNACK: SPICY MEAT AND CHEESE STROMBOLI

Steps:
- Preheat oven to 400 degrees F.
- Break open the tube of dough and remove it from container. Dust your hands and lightly coat the dough with flour or cornmeal the roll out onto work surface. Stretch out dough, gently spreading out the rectangle shape it has been formed into already. Cut the thin rectangular dough into 4 equal pieces, working across the dough: cut it in half and cut each half in half again. Cover each piece of dough with: 6 slices pepperoni, 1 1/2 slices cheese, 1 1/2 slices hot ham and 2 slices Genoa salami. Roll each piece on an angle from corner to corner making a long roll that is thicker in the middle and thinner on each end. Brush rolls with extra-virgin olive oil then mix sesame seeds, cheese and seasonings in a small cup, sprinkle and pat the mixture into the dough. Bake until evenly golden, 12 to 14 minutes then serve. If desired, serve with Dipping Sauce.
- Heat a small pot over medium heat. Add extra-virgin olive oil, garlic, pepper flakes and anchovy paste. Cook 2 minutes. Add parsley, tomatoes, salt and pepper. Stir sauce, bring to a bubble and simmer 5 minutes over low heat then place in small bowl and serve.
STROMBOLI
Steps:
- Preheat the oven 475 degrees, with a pie stone or baking sheet inside.
- On a lightly floured surface, roll the dough into a 10 by 14-inch rectangle. Sprinkle with pepperoni, Sauteed mushrooms, sauteed onions, red peppers, leaving a 1-inch border on all side. Mix the cheese and the herbs together in a small bowl and sprinkle over toppings.
- Roll the stromboli into a log. Seal the dough by pinching the edges and seam.
- Sprinkle some cornmeal on a pizza paddle and place the stromboli, seam-side down on the paddle. Brush the stromboli with 1 to 2 tablespoons olive oil. Carefully place it on the preheated baking sheet or pizza stone. Turn down oven temperature to 400 degrees and bake for 35 to 40 minutes. Remove from the oven and let rest 5 to 10 minutes before slicing.
ENDLESS SUMMER STROMBOLI

- Dissolve salt, sugar, and yeast in the warm water and allow the yeast to proof. ("Proofing" the yeast is testing it for viability. It will develop foam which looks like the head of a beer. If it doesn't proof, the yeast is dead and should be discarded.) Proofing takes about 15 minutes.
- Place flour in a food processor fitted with a dough blade, and through the feed tube with the food processor running, slowly pour the proofed yeast mixture, until the dough comes together and is a cohesive mass. Transfer the dough to a floured board, and knead for about 5 minutes. Place in a bowl, cover with a clean dish towel and allow dough to rise, so that it roughly doubles in volume. (This will take about 30 minutes to an hour). The dough has risen enough if you make an indentation with your finger and it does not spring back.) Punch the dough down and allow it to rise again. (Allowing the dough to rise a second time gives it a finer texture.) Note: It will not rise as much the second time.
- While the dough is rising, prepare the pizza topping. Heat 1 tablespoon of the oil over medium high heat in a large sauce pan and saute garlic and onions. Add parsley, salt, tomatoes, and basil. Cook for about 20 minutes to allow flavors to integrate. Mix with an immersion blender, then set aside briefly.
- Preheat oven to 450 degrees F. Divide the dough in half and stretch out 2 (14-inch) circles. Transfer them to pizza stones sprinkled with cornmeal. Top with the tomato sauce as you would a pizza topping. Lay an even amount of mozzarella cheese slices on each. Roll up and seal ends. Bake for 15 to 20 minutes, or until the dough is nicely browned.
STROMBOLI

- Tip the flour into a large bowl, then stir in the yeast and 1 tsp salt. Pour in 250ml warm water and the olive oil, and bring together with a wooden spoon to make a soft dough. Tip onto a surface and knead for 10 mins until smooth. Put the dough back in the bowl, cover with a tea towel and set aside for 40 mins or until doubled in size.
- Roll the dough out on a lightly floured surface to a rectangle roughly 35 x 20cm. Layer over the salami (leaving a bit of a border), then scatter over the mozzarella and finally the basil leaves. Tuck the shorter edges in and roll the whole thing up like a swiss roll. Will keep frozen, tightly wrapped in foil, for up to one month. Can either be defrosted and baked, or baked from frozen (see step 3).
- Leave the loaf to rest for 20 mins on a baking tray. Meanwhile, heat the oven to 200C/180C/gas 6. Brush all over with olive oil and sprinkle with sea salt. Bake for 40 mins until puffed up and golden. If cooking from frozen, bake for 1 hr. Leave to cool for 10 mins before slicing and serving with salad.

- Coat PiIzza Stone with a dusting of corn meal.
- Roll out first pound of Bread / Pizza dough extend beyond stone 1/2 inch.
- layer in order.
- Onion Rings with a sprinkling of shredded mozzerella cheese.
- cover with Salami, Pepper Rings, add in 1/2 of sliced olives.
- Pepperoni, Provolone Cheese,
- add Sliced Portabella, infill steamed drained spinach and remaining olives.
- add a sprinkling of mozzerella
- add peppered / black forest ham.
- add remaining onion and pepper.
- infill with mozzerella cheese.
- top with Coopocollo.
- Roll next 1 pound dough and cover stitching to base dough layer.
- coat with light olive oil and ventilate with knife to allow venting of steam.
- Bake in preheated 375 degree oven for 40 to 45 min untill golden brown.

- Whisk the warm water, yeast, and granulated sugar together in the bowl of your stand mixer fitted with a dough hook or paddle attachment. Cover and allow to rest for 5 minutes. *If you don’t have a stand mixer, simply use a large mixing bowl and mix the dough with a wooden spoon or rubber spatula in the next step.
- Add the olive oil, salt, and flour. Beat on low speed for 2 minutes. Turn the dough out onto a lightly floured surface. With lightly floured hands, knead the dough for 3-4 minutes (for a visual, watch me do it in the video above!). The dough can be a little too heavy for a mixer to knead it, but you can certainly use the mixer on low speed instead. After kneading, the dough should still feel a little soft. Poke it with your finger – if it slowly bounces back, your dough is ready to rise. If not, keep kneading.
- Lightly grease a large bowl with oil or nonstick spray– just use the same bowl you used for the dough. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise at room temperature for 60-90 minutes or until double in size. If using instant yeast, this takes about 1 hour. (Tip: For the warm environment on a particularly cold day, heat your oven to 150°F (66°C). Turn the oven off, place the dough inside, and keep the door slightly ajar. This will be a warm environment for your dough to rise. After about 30 minutes, close the oven door to trap the air inside with the rising dough. When it’s doubled in size, remove from the oven.)
- Preheat oven to 400°F (204°). Line 2 large baking sheets with parchment paper or silicone baking mats.
