BARRAMUNDI WITH MOROCCAN SPICES
Popular in Australia and the Far East, Barramundi has now come to Britain, so give it a go

Steps:
- Tip all the dressing ingredients into a food processor with a pinch of salt and blitz to a dressing. Slash the fish three times on each side, coat with half of the dressing, then set aside to marinate for about 30 mins.
- Heat oven to 220C/fan 200C/gas 7. Place the fish on a roasting tray, then cook in the oven for 20 mins until the flesh is firm and the eyes have turned white. Serve the fish with the rest of the dressing and steamed couscous or rice.
- KNOW HOW: HOW TO COOK IT: Cooking barramundi on the bone, as we have done here, has its advantages - it will stay more moist during cooking, and some would say that the flavour is enhanced, too. If you want to take out the bones they are easy to locate and less likely to be lodged in the fillet if the fish is cooked whole. Fillets can be simply pan-fried or grilled. If you like trout, you will really enjoy the flavour of barramundi, which lends itself to similar ingredients and cooking methods - citrus flavours are particularly good, as are garlic and wild mushrooms. Simply roasting the fish with some fresh herbs, olive oil and seasoning is delicious, and in the summer months you could barbecue it, too. One thing that you mustn't miss are the cheeks or 'pearls' of the fish, these are simply lovely, moist and really sweet - well worth leaving the head on for!

MOROCCAN STYLE BARRAMUNDI
Oven backed moroccan style barramundi, served on a bed of black quinoa, combined with an olive & tomato medley.

Steps:
- Heat oven hot hot hot aka 200°C.
- Blend the nutmeg, cloves, sweet paprika & garlic salt together in a small bowl, then give your fish a swedish massage with the spices using your hands.
- Thinly slice the lemon and place in the bottom of a greased rectangular pan, then place the fish, skin side down on top of the lemon in the pan. Glaze with a bit of olive oil.
- Put the fish in the oven and let it bake uncovered for 15 to 20 minutes or until fish flakes easily with fork or until you feel it's right.
- Rinse the quinoa well under cold water and drain. Put in a saucepan and add cold water. (Use 2 cups of water for every cup of quinoa.) Toss in a dash of salt. Cover and bring to boil. As soon as it starts to boil, turn the heat down to a simmer, and set the lid just ajar, to prevent boiling over. Simmer for 15-20 minutes. When done turn off the heat, put the lid on and let it chill out for about 5 minutes. It's been through alot!
- Meanwhile, have a glass of wine, put on some tunes & blend sliced rainbow olives, quartered cherry tomatoes, roughly chopped fresh parsley, pepper & virgin olive oil.
- You are now ready to make some art on a plate. Place a bed of quinoa on a funky looking plate, then the barramundi & last but not least, sprinkle your olive & tomato medley on top and finish with a dash of olive oil. And there you go. Dinner served on a floating restaurant, on a dark shimmering ocean, only lit up by the stars above you.

Steps:
- Rinse fillets and pat dry with paper towel
- Spray fillets with canola or olive oil
- Saute fillets on high heat, 3 minutes (skin side up)
- Flip and cook 1 more minute. Transfer to serving dish.
- Sauce:.
- Gently saute the garlic and butter for about 2 minutes. Stir in salt, lemon juice and basil.
- Remove from heat and spoon over fillets immediately before serving.
- Serving Suggestions:.
- Try serving with young green beans, lightly steamed.

MOROCCAN-STYLE BARRAMUNDI WITH CHICKPEAS AND CHILLI

- For spiced chickpeas, cook chickpeas in a large saucepan of boiling water until tender (40-50 minutes), drain and set aside. Heat oil in a saucepan over medium heat, add chillies, capsicum and garlic, stir occasionally until tender (6-7 minutes), add spices and cook until fragrant (1 minute). Add tomato, stir occasionally until just tender (5-6 minutes), add chickpeas and 300ml water, reduce heat to low, cover and simmer until mixture is thick and chickpeas are very tender (25-30 minutes). Season to taste, keep warm and, just before serving, stir in coriander.
- Meanwhile, heat oil in a large saucepan over medium heat, add chillies, capsicum and garlic, stir occasionally until tender (5-7 minutes). Add tomato paste, stir occasionally until colour deepens (1 minute). Add spices, cook until fragrant (30 seconds). Add tomato, cook until just tender (8-10 minutes). Place barramundi on tomato mixture, scatter with coriander, add chicken stock, bring to the simmer, reduce heat to low, cover and cook until fish is just cooked through (10-12 minutes).
- Divide couscous among serving plates, top with chickpea mixture, then barramundi, scatter with remaining coriander, season to taste and serve hot with lemon wedges.
