Steps:

  • Melt the butter in a large saute pan, add the shallots and cook for 3 minutes over medium heat. Add the chicken stock, salt and pepper, raise the heat to high and bring the stock to a boil. Off the heat and add the couscous. Cover the pan and let it sit for 10 minutes.
  • Add the pignoli nuts and currants to the couscous, stir and serve.
  • Place the chickens, onions, carrots, celery, parsnips, parsley, thyme, dill, garlic, salt, and peppercorns in a 16 to 20-quart stockpot with 7 quarts of water and bring to a boil. Skim the surface as needed. Simmer uncovered for 4 hours. Strain the entire contents of the pot through a colander, discarding the chicken and vegetables, and chill. Discard the hardened fat, and then pack the broth in quart containers.

4 tablespoons (1/2 stick) unsalted butter
3/4 cup chopped shallots
3 cups Homemade Chicken Stock, recipe follows, or canned broth
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 1/2 cups couscous
1/2 cup pignoli nuts, toasted
1/4 cup currants
3 (5-pound) chickens
3 large onions, unpeeled and quartered

20 sprigs fresh flat-leaf parsley
15 sprigs fresh thyme

Add softened sweet potatoes, remaining broth, chickpeas, tomatoes, lemon juice, ginger, cumin, curry powder, coriander, chili powder, salt, and pepper. Bring to a boil, reduce heat, and cover pot. Simmer soup until vegetables are tender, about 20 minutes.

Steps:

  • Chop sweet potato, put in a pot with barely enough water to cover.
  • Add salt, bring to a boil, then reduce heat and simmer (just under medium temperature, not too low) for 10-12 minutes until tender.
  • Cook couscous by placing in a bowl with equal amount of boiling water and covering immediately. Leave to cook while potato is simmering.
  • Prepare ginger and lemon.
  • Add everything except lemon zest and couscous to water and sweet potato and keep on cooking about 2 minutes.
  • Stir in lemon zest.
  • Fluff couscous, divide between two pasta plates (they hold the sauce better than flat plates) and top with sweet potato. Be generous with the sauce as it will soak into the couscous and add delicious flavour.

1 large sweet potato, peeled and cut into 1 inch cubes
1/4 teaspoon salt
1 tablespoon fresh ginger, minced
1/2 teaspoon ground cinnamon
1/2 lemon, juice only
1 teaspoon honey
1/4 teaspoon chile
1/4 cup raisins (to taste)
1/2 teaspoon olive oil
lemon zest
3/4 cup couscous
3/4 cup boiling water

  • Add coconut oil to a large dutch oven or pot over medium high heat. Once coconut oil is melted, add in chicken thighs and generously season with salt and pepper. Brown chicken thighs for about 3-4 minutes per side. You do not need to cook completely. Remove chicken and transfer to a plate.
  • Add in garlic, onion, carrot, cauliflower florets and diced sweet potato. Cook for 6-8 minutes, stirring frequently, until onion begins to soften.
  • Next stir in spices: ground turmeric, cumin, cinnamon. Let spices cook for 30 more seconds to enhance flavors, then add the chicken thighs back into the pot. Slowly add in chicken broth, then couscous and salt and pepper. Stir to combine and make sure the chicken is well coated with the broth. Bring to to a boil, then cover, reduce heat to low and simmer for 15 minutes. After 15 minutes remove the lid, stir and allow to simmer uncovered for 10-15 more minutes or until most of the liquid is absorbed. At this point, you can remove the chicken and shred then add back to the pot, or you can leave as is and serve with larger chicken pieces (and eat with a fork and knife). I like to shred the chicken but either way this recipe is simply fabulous.
  • Next, gently stir in the chopped pistachios, parsley and dried cherries. Taste and adjust seasonings as necessary, adding more salt and pepper if desired. Serve with extra parsley + a few crushed pistachios on top. Serves 6. Enjoy!

  • Preheat the oven to 425 °F and take out a sheet pan. Then, make the spice mix. Combine all the spices in a small bowl and stir until well combined.
  • Spread out the diced sweet potato and chickpeas on the sheet pan. Drizzle with the olive oil, then sprinkle on the spice mix. Toss the sweet potato and chickpeas until everything is well coated. It should look like a spice paste is coating everything.
  • Roast the sweet potato and chickpeas for about 25 minutes, or until the sweet potatoes are fork tender. Flip the sweet potatoes and chickpeas about halfway through roasting to ensure they cook evenly.
  • While the sweet potatoes and chickpeas are roasting, make the couscous and dressing. In a medium sauce pan, bring the broth or water and teaspoon of olive oil to a boil. Stir in the couscous, cover tightly and remove from heat. Let the couscous steam for 5 minutes, then fluff with a fork. Keep the couscous covered to stay warm until the other ingredients are ready.
