MY MOTHER'S BEST FUDGE RECIPE
This fudge recipe is quite a treat! It's creamy and full of chocolate flavor. Since there is no specific type of chocolate mentioned, we went with milk chocolate chips. We also opted for pecans and loved the crunch in every bite. If you don't like nuts, leave them out. This fudge will be just as fantastic. You're not going to be...

Steps:
- 1. Before beginning, take a large dish (at least 9 x 12 or larger) and butter it, getting it ready for the fudge to be poured into when the fudge is finished.
- 2. In a heavy pan, add the sugar, evaporated milk, and 2 sticks of butter. Start heating this over medium heat to medium-high heat.
- 3. Heat to a boil and let it boil on low heat until it comes to a soft-ball stage.
- 4. At this point, add the vanilla. Do not let it go any longer. Do not continue cooking. It is very important to take it off at this point so it doesn't overcook or get sugary.
- 5. Add the chocolate chips and marshmallows. Start stirring quickly into the hot mixture.
- 6. If you want nuts, add the nuts at this point.
- 7. Pour it into the greased pan. This will have to set for several hours before cutting because it is a very deep fudge and makes 5 pounds. PATIENCE is worth the wait.
MOTHER'S BEST FUDGE CAKE
My mother made this cake for my birthday every year. She always frosted it with peanut butter icing. Even though she is no longer with us, this cake is still a favorite for birthdays.

FUDGE CAKE (JOHNNY CASH'S MOTHER'S RECIPE)
Johnny Cash was my husband's cousin and I was lucky enough to obtain a cookbook of Johnny's mother's recipes titled, "Favorite Recipes From Mama Cash's Kitchen." I've been asked to post some of the recipes from the book and this is one of them.

MOTHER'S BEST FUDGE
This is almost a no fail recipe for chocolate fudge and it's good. My mother likes to make this and give it to friends and neighbors at Christmas. People would rather you give them gifts from the heart like candy than a useless trinket that gathers dust.

- Add the brown sugar, granulated sugar, butter, cream and salt to a medium-sized pot over medium heat. Stir until butter and sugar are melted and combined. Stop stirring
- Continue cooking until candy mixture starts to bubble and reaches a temperature using a candy thermometer of 236F. Test using the soft ball method by adding some of the candy mixture to a cup of cold water. If a soft candy ball forms than the fudge is cooked.
- Remove from heat and let cool to 110F. Once cooled add the vanilla and quickly beat with a wooden spoon until the fudge becomes smooth, lighter in colour and loses it shininess to a matte texture.
- Pour the fudge quickly into an 8" X 8" glass dish lined with parchment paper. Push the fudge into the corners of the pan with the wooden spoon or spatula and smooth off the top. Let cool completely for about 1 hour and then cut into squares.
