SMOKED MOZZARELLA CHICKEN WITH PASTA

- Cook pasta according to package directions. Drain; transfer to a large bowl., Meanwhile, pound chicken breasts with a meat mallet to 1/2-in. thickness; sprinkle with salt and pepper. Place bread crumbs in a shallow bowl. Dip chicken in bread crumbs to coat both sides; shake off excess., In a large skillet, heat oil over medium-high heat. Add chicken; cook 4 minutes. Turn; cook 2 minutes longer. Top with ham and mozzarella cheese; sprinkle with sage. Cook until a thermometer inserted in chicken reads 165°, 1-2 minutes longer. Remove from heat., Add pesto to pasta and toss to coat. Serve chicken with pasta. If desired, sprinkle with Parmesan cheese.

Steps:
- Cook the past according to package directions. Drain. (I cook the pasta with salt).
- In a large saucepan, under low heat, mix olive oil and chopped garlic, stirring constantly until garlic start browning.
- Turn off the heat, add angle hair, toss. Add salt, if necessary, and black pepper to taste.
- Serve with grilled chicken strips and lots of grated mozzarella and parmesan cheese on top.
- Notes:.
- Use extra virgin olive oil.
- When heating the olive oil with garlic be very careful so you don't burn the garlic.

Steps:
- Cook pasta according to package directions; toss with olive oil; keep warm.
- Combine flour and italian seasoning in large ziploc bag.
- Flatten chicken by placing between pieces of wax paper and pounding to 1/4 inch thickness.
- Place chicken in bag, toss to coat.
- Spray large nonstick skillet generously with cooking spray; heat on medium-high.
- Add chicken.
- Cook approximately 4 minutes on each side (or until no longer pink).
- Place 1 slice of mozzarella over each chicken breast; cover until melted.
- To serve: Arrange pasta, sauce and chicken breast on each plate.
- Garnish with chopped basil.
