MUM'S SIMPLE ECONOMY SCONES
I learned how to make these when I was a little girl. After looking at other more complex recipes, involving eggs and cream, I thought there might be space for mine. All you need is self- rising flour, butter and milk, and Hey Presto! You have afternoon tea or a snack.

Steps:
- Preheat your oven to 250C
- Sift flour and salt in a bowl.
- Rub in the butter with your fingertips, until it resembles breadcrumbs.
- Make a well, and add almost all of the milk.
- (Reserve about a tbs) With a butter knife, quickly work in the milk to the flour, making a dough.
- On a lightly floured surface, knead the dough very lightly.
- Flatten gently with your hands to 1.5cm thick
- Use a round cutter to cut out discs.
- On a buttered tray place scones next to each other.
- Brush with reserved milk.
- Bake for 10 minutes, or until scones sound hollow when tapped.
- Serve with tea, whipped cream and strawberry jam and you have Devonshire tea.
- Or add herbs/grated cheese for savoury scones to serve with soups and casseroles.
SIMPLE SCONES
Great easy recipe. Add grated cheese and sprinkle paprika on tops for a savoury scone. Add 2 cups mashed pumpkin and a teaspoon of cayenne pepper for pumpkin scones.

Steps:
- Pre-heat oven to 200C and line baking tray with paper.
- Combine all ingredients together in a large bowl and mix well.
- Knead together until a soft dough and turn onto a floured board.
- Roll dough out to about 3cm thick and cut scones with a scone cutter.
- Place on tray and brush with egg and milk mixture.
- Cook in oven for 15-20 minutes until golden brown.

SIMPLE SWEET SCONES
This is a simple perfectly delicious recipe my mom used to make for our family. It origioually came from a biscuits and scones recipe book, this one was always my favorite of all the recipes.

Steps:
- Heat oven to 425°F (220 Celsius).
- Put flour, baking powder and salt into a large bowl; stir mix well Add butter and cut in with a pastry blender or rub in with your fingers, until the mixture looks like fine crumbs.
- Add sugar; toss to mix.
- Add milk and stir with a wooden spoon until dough forms,(the dough may be a bit crumbly).
- Place dough on floured counter and knead gently until the dough comes together in a ball.
- Pat or roll into a circle about 1 1/2 inches thick.
- cut each circle into 6 or 8 wedges.
- place wedges on a greased cookie sheet- slightly apart for crisp sides, touching for soft.
- Bake about 12 minutes, or until medium brown on top.

MUMMY'S SWEET WHITE SCONES

- Preheat oven to 475 degrees. Line two baking sheets with parchment paper; set aside.
- In a large bowl, whisk together flour, salt, superfine sugar, and baking powder. Make a well in the center and add butter. Using your fingers, work butter into flour mixture until a crumbly mixture is formed.
- In a medium bowl, whisk together 3 eggs and milk. Add milk mixture to flour mixture and stir to combine.
- Turn dough out onto a lightly floured work surface; knead lightly and shape into a round. Roll dough out until it is 1 inch thick. Using a 3-inch biscuit cutter, cut out scones and transfer to prepared baking sheets.
- In a small bowl, beat remaining egg and brush the top of each scone; sprinkle each with granulated sugar. Transfer baking sheets to oven and bake until golden brown and cooked through, 12 to 14 minutes. Transfer scones to a wire rack and let cool slightly before serving.

- Adjust oven rack to lower-middle position and preheat oven to 400 degrees.
- In a medium bowl, mix flour, 1/3 cup sugar, baking powder, baking soda and salt. Grate butter into flour mixture on the large holes of a box grater; use your fingers to work in butter (mixture should resemble coarse meal), then stir in raisins.
- In a small bowl, whisk sour cream and egg until smooth.
- Using a fork, stir sour cream mixture into flour mixture until large dough clumps form. Use your hands to press the dough against the bowl into a ball. (The dough will be sticky in places, and there may not seem to be enough liquid at first, but as you press, the dough will come together.)
- Place on a lightly floured surface and pat into a 7- to 8-inch circle about 3/4-inch thick. Sprinkle with remaining 1 tsp. of sugar. Use a sharp knife to cut into 8 triangles; place on a cookie sheet (preferably lined with parchment paper), about 1 inch apart. Bake until golden, about 15 to 17 minutes. Cool for 5 minutes and serve warm or at room temperature.
