MUM'S TUESDAY NIGHT SPARE-RIBS (REVISED)
I loved my Mum's spare-ribs. We didn't bbq so this is how she made them :) Now we bbq year round and it's our main source for cooking. Saves on hydro both summer and winter and just tastes better. My husband doesn't care for them done my Mum's way so this is what he came up with. They are very good, but NOT good for you. ...

Steps:
- 1. Pre-heat oven to 350F. Rinse ribs under cold water to remove any bone shards
- 2. Cut individual ribs between the bones and place in a dutch oven. Liberally shake pepper over them and mix the ribs around to get full coverage. Cover the pot and put them in your pre-heated oven.
- 3. You have 45 minutes to go do something :) How about stepping outside with a coffee and taking pictures of the gorgeous day!
- 4. After 45 minutes, reduce heat to 325F and remove pot from oven and drain any grease that has accumulated. Recover and put back in oven. *Old coffee cans are great grease catchers.
- 5. This is what I like about this recipe. Another 45 minutes to fill. You are not a slave to the kitchen for 2 solid hours :)
- 6. After another 45 minutes, remove pot from oven and drain grease again, if necessary.
- 7. Pour VH sauces over ribs in pot and mix around to coat ribs. Put pot back in oven (uncovered) for 1/2 hour. To make Mum's original ribs, this is where you would pour the can of tomato sauce on the ribs and follow the recipe to the end. Potatoes go better with this method than rice. I think so anyway :)
- 8. Use this time to prepare your side of rice or potatoes. Give the ribs a stir in the oven after about 15 minutes and turn the oven off. Leave the ribs in the oven to take advantage of the last of the heat. They will be perfect by the time your side is ready.
- 9. When your side is ready, remove ribs from oven and spoon them onto your rice or beside your potato and use the sauce in the pot to drizzle over everything. It is a sweet sauce, so don't overdo it.
MUM'S TUESDAY NIGHT SPARE-RIBS
I still make these :) I added the extra ingredient of the garlic sauce. Mum only ever used tomato sauce and sometimes a little finely chopped onion, but she liked my version too. Another simple recipe - I love them!

MOM'S 'SWEET 'N' SOURS' PORK RIBS
My Mom's longtime recipe that she learned from my grandmother who has long passed on. Combines soy sauce, sugar, vinegar, dry mustard, garlic, as well as a few other simple ingredients to make a delicious sauce for sweet and sour cut ribs. Great over rice! Some say rice and this sauce is their favorite food! A Lechner family tradition!

Steps:
- Tip the ribs into a big bowl (not a metal one) and throw in the spring onions, chilli and garlic. Now spoon all the remaining ingredients over the ribs and sprinkle with salt and pepper. Get your hands in the bowl and turn the ribs over and over again until they're coated in the sauce. (You can keep the ribs uncooked - tightly covered - in the fridge for up to 3 days. You can also freeze them for several months.)
- Cook the ribs over a moderate barbecue for 20-30 minutes depending on their size, turning them over frequently and brushing with sauce each time. The turning and brushing is important, so that all four sides of each rib get encrusted with the sauce, which builds up like a lacquer. If you have any leftover sauce at the end, heat it up in a pan and pour it over the ribs just before serving.

Steps:
- If there's a thin membrane on the back of the ribs, peel this off as best you can. The length of the ribs will be determined by the size of your roasting tin and barbecue - leave them whole or cut in half or thirds. Tip the ribs into a large, deep roasting tin. Whisk the rest of the ingredients together in a bowl until completely combined, then pour this over the ribs. Toss the ribs in the sauce using your hands to ensure they're completely coated. Cover the tin with foil, shiny-side down. To cook straightaway, simply leave to marinate while the oven heats up, or chill the ribs overnight.
- Heat the oven to 160C/140C fan/gas 3 and bake the ribs for 2 hrs 30 mins-3 hrs, turning once or twice until the bones are exposed and the meat is pull-apart tender. When the ribs are cooked, leave to cool a little, then lift onto a tray using tongs. Pour the sauce from the tin into a saucepan and bring to the boil. Reduce the heat and simmer for 25-30 mins, stirring occasionally until thickened. Leave to cool. The sauce and ribs can be prepared up to two days ahead and chilled.
- Light the barbecue and wait until the coals are ashen, or set a gas barbecue to medium. Put as many ribs on the grill as you can fit, then brush generously with the sauce. Working quickly, grill the ribs, basting with more sauce and turning every minute or so until the ribs are well-coated, charred at the edges, caramelised and sticky. Repeat with any remaining ribs and sauce if they didn't all fit on the grill at once. Serve piled high on a platter with the reserved sauce on the side for slathering on top. Any leftover sauce will keep chilled in the fridge for up to a week.

PRESSURE COOKER STICKY TAMARIND BABY BACK RIBS
These gingery sweet-and-sour glazed ribs are tender and intensely flavored - and pretty much impossible to stop eating once you start. The sauce also works well on spare-ribs if you'd like to substitute those here. Just reduce the cooking time by a few minutes on the pressure setting, or as much as an hour if using the slow cooker setting. This is one of 10 recipes from Melissa Clark's "Dinner in an Instant: 75 Modern Recipes for Your Pressure Cooker, Multicooker, and Instant Pot" (Clarkson Potter, 2017). Steps:
- Cut the ribs into chunks of 2 or 3 ribs, depending on their size, and place them in a large bowl. Toss with 1 teaspoon salt, and set aside while you prepare the sauce.
- In a small bowl, combine the tamarind, orange juice, honey, soy sauce, lime zest and juice and star anise. Set aside.
- Using the sauté function, heat the oil in the pressure cooker. Stir in the shallots and cook until they are starting to brown, about 5 minutes. Stir in the ginger and garlic and cook until fragrant, another minute, then stir in the tamarind mixture. Bring to a simmer, and then scrape the sauce into the large bowl of ribs. Toss gently to combine.
- Arrange the ribs standing up along the outer edge of the pressure cooker, making a ring with the meat side of the ribs facing out. Continue with the remaining ribs, arranging them to make concentric circles. Pour any remaining sauce over the ribs, cover and cook on high pressure for 32 minutes. Allow the pressure to release naturally.
- Heat the broiler.
- Transfer the ribs, meat-side down, to a rimmed baking sheet. Turn the pressure cooker to the sauté function and cook to reduce the sauce until it's thick, about 15 minutes; spoon the fat off the top when finished. Taste the sauce, and adjust the seasoning or add more honey if necessary; then brush the ribs with the sauce. Broil the ribs until they are charred in spots, 1 to 3 minutes. Then flip them over, brush with more sauce, and broil on that side until charred. Serve immediately, with more sauce on the side.
