MY FAVORITE HUNGARIAN GOULASH

I have tried numerous recipies for goulash and this has to be my favorite. Such a nice, hearty meal to serve at the end of a cold winter's day.

My Favorite Hungarian Goulash image

Steps:

  • Brown beef in large skillet; drain. Add onions, bell pepper & garlic; saute until tender.
  • Combine catsup, Worchestershire sauce, brown sugar, sea salt, paprika, dry mustard, red pepper & 1 cup water. Stir into beef mixture, cover and simmer.
  • Cook macaroni according to package directions; drain.
  • Blend flour and 1/4 water; stir into beef mixture & simmer, stirring until thick and bubbly.
  • Pour over macaroni; mix well.
  • Spoon into baking dish; cover with shredded Cheddar cheese.
  • Bake at 350 degrees Farenheit for 30 minutes.

1 lb ground beef
1 cup sliced onion
1/2-3/4 cup chopped bell pepper
1 garlic clove, minced
3/4 cup catsup
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar
2 teaspoons fine sea salt
1 teaspoon paprika
1/2 teaspoon dry mustard
1 dash red pepper
1 cup water
2 tablespoons flour
1/4 cup water
1 1/2 cups dry elbow macaroni

HUNGARIAN GOULASH

This is my mother's recipe for goulash but I've made a couple of alterations to improve it, such as using beef broth instead of water and real Hungarian paprika instead of Spanish paprika. You can use Spanish paprika if Hungarian is unavailable, but it tastes much better with Hungarian paprika. It is also nice made with stewing veal. When I was a child, I liked this so much that I used to eat it for breakfast if there was any left over from supper!

Steps:

  • Heat oil in a large Dutch oven and add stewing beef.
  • Saute until nicely browned.
  • Remove meat from pan with slotted spoon and put to one side.
  • Add onions and cook until slightly softened and caramelized.
  • Return meat to pan.
  • Sprinkle meat and onions with paprika, salt and pepper.
  • Add broth and bring to a boil.
  • Cover and simmer for 1-1/2 hours or until tender.
  • Mix flour with water to make a smooth paste and add to simmering goulash.
  • Bring back to a boil and cook until the sauce thickens.
  • Add sour cream and heat through.
  • Serve over potato dumplings or egg noodles.

Steps:

  • In a large skillet combine hamburger, onion, salt, pepper and chili powder.
  • Brown it until pink is gone.
  • While the meat is browning, cook the pasta according to package directions.
  • When the hamburger is done, drain any fat.
  • Drain the pasta when done.
  • In a large pan, combine hamburger, pasta and all remaining ingredients.
  • Heat.
  • Serve with garlic bread!

Steps:

  • Preheat oven to 325 degrees F.
  • Dredge meat in enough flour to coat.
  • Heat 3 tbsp.vegetable oil in large skillet and brown meat on all sides; drain and set aside.
  • Spray 2 1/2qt.casserole dish with cooking spray.
  • Combine meat, onion, bell pepper, garlic, pepper, paprika, thyme, and bay leaf in casserole, mixing well.
  • Stir in tomatoes.
  • Cover with lid or foil and bake at 325 degrees for 1 1/2 hours.
  • Place sour cream in bowl.
  • Stir some of goulash sauce into sour cream, mixing well.
  • Stir blended sour cream back into goulash, stirring to incorporate.
  • Bake 30 minutes more, or until meat is tender.
  • Serve with cooked egg noodles.

  • Place garlic in a small bowl; mash with the back of a spoon to form a paste. Add 1/4 teaspoon salt, caraway seeds, and 1/8 teaspoon black pepper.
  • Heat a large Dutch oven over high heat. Coat pan with cooking spray. Combine 1/4 teaspoon salt, remaining 1/8 teaspoon black pepper, and pork in a medium bowl; toss. Add pork to pan; sauté 6 minutes, browning on all sides. Remove pork from pan.
  • Reduce heat to medium-high; return pan to heat. Add onion and bacon; sauté 7 minutes or until bacon is done, stirring frequently. Stir in garlic mixture; cook for 1 minute, stirring constantly. Place 1 cup noodles in each of 4 shallow bowls; top with 1 cup pork mixture. Top each serving with about 2 teaspoons sour cream. Garnish with parsley, if desired.
