MY GRANDMOTHERS' CHESS PIE
Both of my grandmother's made the most awesome chess pie! This brings back so many nostalgic memories. I made the "quick and perfect" pie crust to go with this pie.

Steps:
- 1. Combine sugar, flour, meal, and mix. Add melted butter and mix. Add eggs, then buttermilk and vanilla. Mix well and pour into unbacked pie shell. Bake at 325 for about an hour or until set. You may also add 1 c. coconut or 1 c. drained crushed pineapple for variation.
GRANDMOTHER TAYLOR'S SOUTHERN CHESS PIE
This is by far my favorite pie. My grandmother always made this for me on Friday nights when I would stay with them. I watched her make it and share the love of this with my daughter.

- 2. Melt butter, add other items. Put into a unbaked pie shell. I think she used a 9" shell.
- 3. Bake at 300 degrees for 30-50 minutes.This will be a custard-like pie.
CHESS PIE
This is a very old Southern recipe. It's a very sweet, rich pie which cannot be described as anything but marvelous. This is not my personal recipe but was passed to me by my grandmother and from her grandmother and so on and so forth.

- Preheat the oven to 425 degrees F (220 degrees C).
- In a large bowl, mix the butter, sugar and vanilla together. Mix in the eggs, then stir in the cornmeal, evaporated milk and vinegar until smooth.
- Bake for 10 minutes in the preheated oven, then reduce heat to 300 degrees F (150 degrees C) for 40 minutes. Let cool. Cut and top servings with whipped cream. You will think you have died and gone to heaven.

- Preheat the oven to 350°F. In a large bowl, whisk together the cocoa powder, sugar, and corn starch. Add in the beaten egg, melted butter, milk, and vanilla. Stir well to combine.
- Pour the mixture into the unbaked pie shell being cautious not to over-fill. Bake for 45 to 55 minutes or until a crust has formed completely across the top of the pie and is mostly set. There will still be some jiggle to the pie. Allow to cool completely before slicing and serving. This will allow it to set even more. Serve with a dollop of whipped cream, if desired.

- Add the eggs, one at a time, beating well after each. When the egg mixture is well beaten add the milk, vanilla, lemon juice and zest beat until smooth.
- Bake at 350 degreed F for 55-60 minutes. Check the pie after 30 minutes and place a piece of aluminum foil on top to keep it from getting too brown. (I spray the foil with a non-stick spray to keep it from sticking to the top of the pie.)
