CHEF JOHN'S ITALIAN MEATBALLS
Homemade meatballs are a very easy to make, and since we skip the very messy step of pan-frying these before they hit the sauce, it becomes downright simple. Here I use a standard half-beef/half-pork mixture. You can substitute water or beef broth for the milk, if preferred.

Steps:
- Cover a baking sheet with foil and spray lightly with cooking spray.
- Soak bread crumbs in milk in a small bowl for 20 minutes.
- Heat olive oil in a skillet over medium heat. Cook and stir onions in hot oil until translucent, about 20 minutes.
- Mix beef and pork together in a large bowl. Stir onions, bread crumb mixture, eggs, parsley, garlic, salt, black pepper, red pepper flakes, Italian herb seasoning, and Parmesan cheese into meat mixture with a rubber spatula until combined. Cover and refrigerate for about one hour.
- Preheat an oven to 425 degrees F (220 degrees C).
- Using wet hands, form meat mixture into balls about 1 1/2 inches in diameter. Arrange onto prepared baking sheet.
- Bake in the preheated oven until browned and cooked through, 15 to 20 minutes.

AUTHENTIC ITALIAN MEATBALLS
Meatball recipes are often challenged by chefs who claim, "Mine are the best!" Even though my meatballs ARE the best, I will make no such claim. Try them for yourself! This meatball recipe was given to me by my father who got it from a little old lady from Italy that he knew. It's amazing that she gave up her recipe to him, but I sure am glad she did!

Steps:
- Mix all ingredients in a large bowl by hand.
- Use your bare hands for best results.
- Roll meatballs to about the size of a golf ball. (wet your hands to prevent the meat from sticking to them while rolling the meat balls).
- Drop raw meatballs into large (I use a stock pot) pot of sauce.
- (I have an incredible sauce recipe {#92096} I use for my meatballs).
- Simmer for about 3 hours.
MY ITALIAN MEATBALLS
I have played around with different recipes and always seem to end up with these. They come out moist and hold their shape. I bake them in the oven which is easier for clean up and I can drain the fat out of them easier.

- Heat oven to 350 degrees.
- In a large bowl combine all the ingredients with a large wooden spoon or fork or use your hands.(This adds the Love!). Incorporate it all together gently, being careful not to over mix. Form into 24 meatballs and place in a 9x13 metal baking pan. Bake for 350 degrees for 45 minutes.

- Preheat oven to 375°. In a small skillet, heat oil over medium-high heat. Add onion; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. Cool slightly., In a large bowl, combine bread crumbs, cheese, eggs, seasonings and onion mixture. Add turkey and beef; mix lightly but thoroughly. Shape into 1-1/2-in. balls., Place meatballs on a rack coated with cooking spray in a 15x10x1-in. baking pan. Bake until lightly browned and cooked through, 18-22 minutes. MY ITALIAN MEATBALLS AND SAUCE
Don't be afraid of the amount of eggs and water. These meatballs are really tender. I drop them directly into the hot sauce and cook them that way. The small amount of fat in the meat flavors the sauce, and you don't have to fry them beforehand. Saves time and fat and that's a Great Thing! Add a little crushed red pepper if you want your sauce to have a little more zip. The sauce is actually better the second day.

Steps:
- Heat 1 Tablespoon oil in Dutch oven.
- Add 1/4 cup onions and saute until soft but not brown.
- Add both cans of tomato products and get the sauce hot and simmering, not boiling because you don't want to scorch it.
- In a large bowl, mix first 11 ingredients until blended. Over-mixing will toughen the meatballs.
- Shape into balls about 1 1/2 inches across.
- Drop them into the hot sauce, making sure they are covered. Don't stir too much because you don't want to break them up.
- Cover and simmer one hour.
- Serve over pasta of your choice (I like angel hair), garnish with some extra parmesan.

- In a small bowl soak the bread in the milk for about 5 minutes, then squeeze out moisture and crumple into small bits.
- In a medium bowl combine the bread with ground beef, eggs, parmesan and spices gently mix to combine well (I use my clean hands, its the best way to do it). Form into small balls ( I form the meatballs into the size of a golf ball). In a medium frying pan on medium heat, add the olive oil and the meatballs, brown them on all sides.
- While meatballs are browning, in a separate, large deep pan add the olive oil, the tomato puree (or peeled tomatoes), spices and water, stir until well combined. Add the browned meatballs. Over medium heat, heat to boiling, then lower heat to medium low and simmer for approximately 20 minutes (covered), then raise the heat to medium, (leave pan slightly uncovered 1/3 uncovered) and cook an additional 20 minutes, until sauce has thickened and meatballs are cooked through. Serve immediately, top with freshly grated parmesan cheese if desired. Don't forget some crusty Italian bread to soak up the delicious sauce. Enjoy!
