ANGEL HAIR PASTA WITH SAUSAGE & SPINACH

Steps:
- In a Dutch oven, cook the sausage, onion and garlic in oil over medium heat until meat is no longer pink; drain. Add broth; bring to a boil. Add pasta; cook for 3 minutes, stirring frequently., Gradually add spinach. Cook and stir until pasta is tender and spinach is wilted, 2-3 minutes. In a small bowl, combine the flour, pepper and cream until smooth; gradually stir into pasta mixture. Bring to a boil; cook and stir until thickened, 1-2 minutes.

ITALIAN ANGEL FOOD CAKE

Steps:
- Preheat the oven to 350 degrees F.
- Place the sugar in a food processor and process until it is finely ground. Divide the sugar in half. Combine one half with the flour, leavening agent and salt and place in a sifter.
- Combine the egg whites, 1/3 cup room temperature water, cream of tartar and vanilla. Place in the bowl of the standing mixer. Start on slow for 2 minutes, and then increase the speed to medium. Slowly add the remaining sugar to the egg whites and continue to mix.
- Once the egg whites are at medium peaks, remove the bowl from the mixer and sift over the flour mixture a little at a time as you fold it together. When completely combined, transfer to a 10-inch ungreased angel food cake pan. Transfer to the oven and bake for 35 minutes.
- Remove from the oven and invert while still in the pan. Let cool for at least an hour upside down.
- Insert a knife around the edges and remove from the pan. Serve.

- Preheat the oven to 375 degrees F (190 degrees C). Grease a large cookie sheet.
- Whisk together sugar, butter, milk, eggs, and vanilla in a large bowl until blended.
- Mix flour, baking powder, and salt in a medium bowl. Add to the wet ingredients and stir until evenly blended. Cover the surface of the dough with plastic wrap or waxed paper and let stand for 5 minutes.
- With floured hands, shape dough by level tablespoon into 1-inch balls. Place balls 2 inches apart on the prepared cookie sheet.
- Bake in the preheated oven until puffed on top and light brown on the bottom, 7 to 8 minutes. Remove from the oven and transfer cookies to a wire rack to cool, about 30 minutes. Shape remaining dough into cookies and baking instructions.
- Whisk together confectioners' sugar and water in a small bowl until blended. Dip the top of each cooled cookie into the glaze, then place on a wire rack set over waxed paper (this will catch any drips.) Immediately sprinkle cookies with candy sprinkles. Allow glaze to set for about 20 minutes.

- Saute the first five ingredients in oil until light brown. Add tomatoes, puree, parsley and seasonings. Bring to boil, reduce heat, cover and simmer 4 minutes. Stir in cheese and simmer 10 minutes more. Cook pasta according to directions on package. Serve with sauce and grated cheese.
