NANA'S PERSIMMON COOKIES
When I was a little girl, my sweet Portuguese Grandmother used to make these moist and delicious cookies for my two brothers and me. We always looked forward to eating them, and it was such a special treat. To this day when I bake these cookies the wonderful aroma brings me right back to grandma's kitchen. Steps:
- 1. Mix together sugar, butter, persimmon, egg, and vanilla.
- 2. Sift dry ingredients in separate bowl: Flour, cinnamon, nutmeg, all spice, cloves, baking powder, baking soda, and salt.
- 3. Add dry ingredients to sugar, butter, pulp from persimmons, egg, and vanilla mixture. Fold in nuts. Drop by rounded spoonfuls of cookie dough on a lightly greased cookie sheet. Or use parchment paper. Bake at 350 for 15-20 minutes.
OLD-FASHIONED DOUGHNUT STICKS
Steps:
- For the doughnuts: Preheat the oven to 375 degrees F. Spray two 6-well eclair pans with nonstick spray.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon and salt to combine. Add the milk, egg, vanilla and butter, and mix gently until combined.
- Fill the wells of the prepared eclair pans about halfway with the batter.
- Bake until the doughnuts spring back when touched and a toothpick comes out clean, 10 minutes. Transfer the pans to a rack set over a baking sheet; let cool for 3 to 5 minutes. Remove the doughnuts from the pans and let cool completely on the rack.
- For the glaze: Whisk the confectioners' sugar and milk together until smooth.
- Dunk the doughnuts in the glaze to coat completely. Transfer to a rack and let set for 10 minutes before serving.

Steps:
- In a bowl, cream the shortening and dark brown sugar together.
- Add beaten eggs to the sugar mixture.
- Add the vanilla and nuts.
- Add the flour, salt, and baking powder.
- Spread the mixture evenly in a 12 x 6 greased pan.
- Bake for 30 minutes in a 350 oven.
- Cool and cut into 1 x 3 inch sticks.
- Roll sticks in white powdered sugar.
