Nando's Peri - Peri Soup Stew image

Steps:

  • Heat the olive oil in a large saucepan. Add the onion and cook for 6 minutes until soft and translucent.
  • Add the meat and cook over medium-high heat, stirring often, until well browned. Spoon out as much fat as possible.
  • Turn the heat to low and stir in the garlic, cumin, Nando's Garlic Peri-Peri sauce, salt and black pepper. Add the tomatoes, tomato paste, mustard and beef stock. Simmer for 20 minutes.
  • Drain and rinse the kidney beans. Stir well and simmer for 20 minutes. Taste and correct seasoning.
  • Add the dill and parsley just before serving.

30 ml olive oil
1 large onion, chopped
500 g coarse minced chuck or 500 g topside mince
10 ml garlic, finely chopped
15 ml ground cumin
15 ml nando's garlic peri-peri (or to taste)
5 ml salt
2 1/2-5 ml fresh ground black pepper (1/2-1 teaspoon)
5 ml Dijon mustard
250 ml beef stock
800 g red kidney beans
1/2 lime, juice of
15 ml fresh dill, chopped
15 ml fresh parsley, chopped
800 g chopped Italian tomatoes
15 ml tomato paste

ITALIAN SOUP STEW

A yummy soup that my neighbor used to make for my family. After he moved away, we finally found the recipe online and wanted to keep it in a safe place. Some of the ingredients seem weird (like the dill pickles) but they work together really well. It's easily doubled if you have a large enough pot to fit it all.

Steps:

  • Combine tomato, sausages, tomato sauce, stock, onion, garlic, carrots, basil and oregano in a large pot and simmer (DO NOT BOIL) 30 minutes.
  • Add remaining ingredients and simmer slowly for another hour, adding more water as needed to cook tortellini.

1 lb Italian sausage, cut into bite sized pieces
1 (15 ounce) can tomato sauce, Italian flavor
7 cups beef stock
1 cup onion, chopped
1 garlic clove, minced
1 cup carrot, sliced
1 -2 tablespoon fresh basil, chopped (or 1 tsp dried)
1 teaspoon oregano
2 cups zucchini, sliced
1 cup mushroom, sliced
1 medium green pepper, seeded and sliced
1/4 cup fresh parsley, chopped
1 1/2 cups dill pickles, sliced
2 cups tortellini (frozen)
