Granny's Nana Pudding image

Steps:

  • In a chilled bowl, with chilled beaters, beat the cream and confectioners' sugar together until soft peaks.
  • Whisk together the sweetened condensed milk, pudding mix, half-and-half, sour cream and the salt in a large bowl.
  • Reserve 4 to 6 cookies for garnish and layer half of the remaining cookies among the bottom of 4 to 6 16-ounce serving dishes (or mason jars), or in a trifle bowl (or other large glass serving dish). Next, drizzle half of the caramel over the cookies, then a layer of half the bananas, then half the pudding mixture. Repeat the layers with the remaining ingredients. Top with the whipped cream and a butter cookie or cookies. Serve or chill up to overnight.

2 cups heavy whipping cream
1/2 cup confectioners' sugar
One 14-ounce can sweetened condensed milk
One 5.1-ounce box instant vanilla pudding
2 cups very cold half-and-half
1 cup sour cream
Pinch sea salt
One 12-ounce tin or 16-ounce box butter cookies
1 cup prepared caramel sauce
6 large bananas, sliced

Be sure to let the dough rest before baking. This allows the flour to hydrate and create the soft pillowy texture that Yorkshire puddings are known for. It's also important to preheat the pan; the puddings won't rise and puff unless your tin is literally smoking hot.

Steps:

  • Preheat the oven to 400 degrees F.
  • Whisk the flour, milk, eggs and 2 teaspoons salt in a medium bowl until smooth-be sure not to over mix. Let sit for 30 minutes.
  • Meanwhile, spoon 1 teaspoon beef fat into each hole of a 12-cup muffin tin. Place the tin in the oven and cook until the fat melts and the pan is very hot, 5 to 6 minutes. Working quickly, pour the batter evenly into the muffin tins, filling each tin about halfway. Bake until the puddings are golden brown and very puffed, about 20 minutes. Serve immediately.

Steps:

  • Mix flour and salt together until blended. Make a well in the flour, add the milk, and whisk until consistent. Beat the eggs into the batter. Add water and beat again until the mixture is light and frothy. Set aside for an hour (or, if it's the day before, cover in the fridge overnight).
  • If the batter has been refrigerated, allow it to come up to room temperature before using. When the roast beef is ready to come out of the oven, ready the mixture.
  • Preheat oven to 400 degrees F (205 degrees C).
  • Pour off drippings from roast beef and measure out desired amount (about 1/2 cup should do). Pour drippings into a 9x12 inch baking dish and place into the oven until the drippings sizzle. Pour the batter over the drippings and bake for 30 minutes (or until the sides have risen and are golden brown). Cut into eight portions and serve immediately.

  • Preheat the oven to 450 degrees F.
  • To make the batter, combine the half-and-half and eggs in a bowl and whisk until totally combined. Then throw the flour and salt into a sifter and sift them straight into the bowl. Whisk until it's nice and smooth.
  • Pour a small amount of beef drippings (about 1/2 teaspoon or so) into each cup of a standard muffin pan and place the pan in the hot oven until just before the drippings begin to smoke, a couple of minutes. Carefully remove the pan from the oven and immediately fill the muffin cups about one-half to three-quarters full with the batter. Bake until the puddings have popped about as much as they can pop, 13 to 14 minutes.

NANNA'S YORKSHIRE PUDDING

These are my nanna's and mother's Yorkshire pudding recipes. I guess the problem with traditional recipes is that they are seldom very accurate. This does not produce a "popover" style Yorkshire pudding like I have found in North American restaurants. The result of the recipes below is the more traditional style--slightly eggy, and "fallen." My siblings and I MUCH prefer it this way. Batter resting time not included in preparation time.

Steps:

  • In a bowl combine flour and salt.
  • With a handheld mixer add the milk, in a stream, until smooth.
  • Add water and eggs and beat until combined well and bubbly.
  • Let stand, covered, at room temperature for 1 hour.
  • Preheat oven to 450°F
  • Divide drippings among six muffin pan cups.
  • Heat the cups in the oven until almost smoking.
  • Beat batter until bubbly and divide among muffin cups.
  • Bake 10 minutes in lower third of the oven without opening the oven door.
  • Reduce oven temperature to 350 degrees F and continue to bake for another 10 minutes until puffed, crisp and golden brown.
  • Serve immediately.
  • MUM'S YORKSHIRE PUDDING 1 cup flour 1 cup milk 2 eggs salt & pepper Put fat from roast into glass pie plate or use vegetable oil. (Be generous.) Mix listed ingredients together. Cook in 450F oven for 25 minutes.
