- Place the tortillas on a greased baking sheet. Combine the cheese and salsa; spread over half of each tortilla. Fold over. , Broil 4 in. from the heat for 3 minutes on each side or until golden brown. Cut into wedges.

NELDA'S MACARONI AND CHEESE
This is an easy mac & cheese that my friend Nelda gave me. My boys love it and it can easily be doubled to take to church suppers, etc. I'm posting it here before I lose the piece of paper I copied it down on!

Steps:
- Start cooking the macaroni.
- In a medium saucepan on medium high heat, melt the butter, then whisk the flour in and, still stirring, let it cook for a few minutes until it starts to thicken. (You may have to turn down the heat a little to keep it from scorching.).
- Start whisking the milk into the butter/flour mixture till combined.
- Still whisking, add in the Velveeta and the sharp cheddar. Keep stirring until all the cheese has melted and the mixture is smooth. Remove from heat. Stir in salt and white pepper to taste. You can also add a few shakes of ground mustard if you like.
- By this time the macaroni should be cooked. Drain the macaroni, put it in whatever dish you're using, then pour the cheese sauce over it and mix.

I first tasted this salsa at a party and the hostess was gracious enough to give me the recipe. I named the recipe after her. My family requests this recipe every time they come to visit. It is my favorite salsa recipe!

Steps:
- Mix the Good Seasons Italian dressing according to package, using the vinegar, water and oil.
- Mix the cheese, onions, tomatoes, black olives, green chilies and cilantro together.
- Pour Good Seasons Italian dressing over all.
- Refrigerate until needed.
- Serve with Wheat Thins or Tortilla chips.
- I use more olives than calls for and just slice or chop up the amount I like.
- To get the full recipe, it is best to use a solid block of cheese.

- In a large frying pan, combine all ingredients, except for the cheese. Heat to boiling over high heat. When liquid begins to boil, reduce heat to a low simmer and cover.
- Cook for 10-12 minutes, or until pasta is tender and nearly all liquid has been absorbed. Remove from heat and immediately gently stir in about 4 ounces of the shredded cheese (about 1 cup) into the hot pasta. Sprinkle remaining 8 ounces (about 2 cups) on top of the hot pasta, cover with lid until melted. Serve with optional toppings.
- TIP: If desired, place pan (if heat resistant to high temperatures) under broiler to brown cheese a bit (this is completely optional).
