NEXT LEVEL TIRAMISU
Create this superb version of the classic, creamy Italian dessert. It's the perfect ending to a decadent meal: rich yet light, laced with booze and a coffee hit to pick you up

- Beat the egg yolks, sugar, the vanilla, a grating of nutmeg and 50ml of the marsala using an electric whisk in a heatproof bowl over a pan of barely simmering water for 10 mins, until pale and light. Put in the fridge to cool.
- In a separate bowl, beat the mascarpone and cream together with an electric whisk until the mixture holds soft peaks. Gently fold the egg yolk and cream mixtures together with a spatula, being careful not to over-stir. Put the bowl back in the fridge to chill.
- Scatter a little sugar over the base of a deep 20 x 20cm serving dish. Pour the coffee and the remaining 100ml marsala into a bowl. One by one, dip 12 biscuits in the coffee mixture on each side for a couple of seconds (don't leave them too long or they'll go soggy), then lay flat in the dish to cover the base. Spread over half the cream mixture. Dip the remaining biscuits in the coffee and arrange on top of the cream, then finish with a final layer of the cream. Cover the dish and chill for at least 3 hrs. Can be made up to two days in advance.
- To make the crunchy topping, put the sugar and a splash of water in a saucepan, and stir to combine. Simmer over a medium heat until you have an amber-coloured caramel. Pour the caramel onto a parchment-lined baking tray and tilt to spread. While it's still hot, dust with the coffee and cocoa powder, then leave to set until hard. Break into small pieces, then blitz in a processor to a rough crumb. Sprinkle over the tiramisu and dust with a little cocoa powder to serve.

On my first trip to Italy to meet my husband's family back in 1995, I didn't speak a word of Italian. But I did learn how to make great 'dolci' from his sister, Maria. This was her recipe and now when we go back they ask me to make it!

- Beat 1/2 cup sugar, egg yolks, brandy, and 1 tablespoon espresso together in a bowl using an electric mixer until smooth, 2 to 3 minutes. Add mascarpone cheese to sugar-egg mixture and beat until well blended, 3 to 5 minutes.
- Beat egg whites and a pinch sugar in a bowl using an electric mixer until stiff peaks form. Gently fold egg whites into mascarpone mixture.
- Pour remaining espresso into a shallow dish. Dip 1 side of each ladyfinger into the espresso and arrange on a serving platter in 2 horizontal rows of 6 with 2 1/2 ladyfingers in opposite direction on both ends to form a rectangular shape.
- Spread 1/2 of the mascarpone mixture onto the ladyfinger layer and dust with 1/2 of the cocoa powder. Repeat with remaining ladyfingers dipped in espresso, mascarpone mixture, and cocoa powder. Refrigerate tiramisu until ladyfingers have softened from the espresso and mascarpone mixture, 2 to 3 hours.

Steps:
- Start syrup: Combine white sugar and boiling water in a medium bowl; stir until sugar dissolves. Set aside.
- Prepare filling: Combine powdered sugar, mascarpone cheese, 1/4 cup tuaca, and vanilla extract in a bowl; whip with the whisk attachment of an electric mixer until smooth. Gradually add whipping cream and whip until soft peaks form.
- Continue syrup: Mix coffee and tuaca into the sugar-water mixture.
- Assemble tiramisu: Line the bottom of a 9x13-inch glass baking dish with ladyfingers. Pour 1/2 of the syrup over top, then layer with 1/2 of the filling. Add another layer of ladyfingers and cover with remaining syrup and filling. Smooth with the back of a spoon and sprinkle with grated chocolate. Refrigerate for at least 4 hours before serving.
