HOMEMADE GRANOLA
Steps:
- Preheat the oven to 350 degrees F.
- Toss the oats, coconut, and almonds together in a large bowl. Whisk together the oil and honey in a small bowl. Pour the liquids over the oat mixture and stir with a wooden spoon until all the oats and nuts are coated. Pour onto a 13 by 18 by 1-inch sheet pan. Bake, stirring occasionally with a spatula, until the mixture turns a nice, even, golden brown, about 45 minutes.
- Remove the granola from the oven and allow to cool, stirring occasionally. Add the apricots, figs, cherries, cranberries, and cashews. Store the cooled granola in an airtight container.
INA'S HOMEMADE GRANOLA
This is Ina Garten's recipe (The Barefoot Contessa) and I think it is delicious. However, I have never made any of her recipes that I didn't think was delicious. I love this over yogurt.

- Pour into a 13x9 baking pan and bake. Stir occasionally with spatula until mixture turns a nice golden brown about 45 minutes.
- Remove granola from oven and allow to cool, stirring occasionally. Add the apricots, figs, cranberries and cashews. You can put whatever mix of dried fruit in that you please. I have even started to put in a cup of dark chocolate chips after the oats mix has cooled.
- Great snack!
- Store cooled granola in airtight container.
NINA'S HEALTHY GRANOLA
This is a recipe that I got from my wonderful friend. It's one of those granola recipes that you can easily tweak to fit your personal choice of tastes. If you don't like wheat germ, try flax meal. Not a coconut fan? Leave it out. And you can add any type of dried fruit that you like! You can't go wrong with this one. Plus...only 1/3 cup of brown sugar!! Steps:
- In large bowl, combine oats, brown sugar, wheat germ, coconut, nuts and nonfat dry milk.
- Combine honey, oil, water and vanilla (in separate dish).
- Add slowly to oat mixture and stir to coat.
- Turn into 2 large pans (shallow -- like a cookie sheet).
- Heat in 300 degree oven for 20-25 minutes.
- Stir twice during heating. Stir occasionally while cooling.
- Add berries, store in tightly sealed containers or bag, and enjoy!

ENERGIZING GRANOLA
Steps:
- Preheat oven to 325°. In a large bowl, combine the first 8 ingredients. In a small saucepan, combine water, honey, molasses and oil. Heat for 3-4 minutes over medium until heated through. Remove from the heat; stir in vanilla, salt and cinnamon. Pour over oat mixture; stir to coat., Transfer to a greased 15x10x1-in. baking pan. Bake until lightly browned, 25-30 minutes, stirring every 10 minutes. Cool completely on a wire rack. Stir in dried fruits. Store in an airtight container.

KID SAFE (NUT FREE) GRANOLA
My kids love granola sprinkled over their yogurt, but they are still young enough that nuts are a choking hazard for them. This recipe is a modification of my more "adult" one (variation at bottom) to make it safe for them to eat. The taste reminds me a bit of a Nature Valley brand maple/brown sugar granola bar. Number of servings is a guess as it depends on whether you use the granola for yogurt or as a cereal with milk poured over or just as a snack. A great OAMC recipe too!

Steps:
- Preheat oven to 350 degrees.
- Combine oats, cereal, and wheat germ or flaxseed in large bowl.
- Heat brown sugar, maple syrup, honey, oil, and salt in saucepan just until sauce melts together.
- Remove from heat, add vanilla, stir, and add to oat mixture.
- Thoroughly fold sauce into the cereal. This takes a bit of patience and the cereal mixture will appear a bit dry.
- Spread onto greased jelly roll pan.
- Bake approximately 20 minutes, taking out to stir (so the edges don't burn) every 6 or 7 minutes, until it is toasted to your liking. I like it nice and crunchy so I let mine go about 24 minutes or so normally.
- Cool, stirring every 5 minutes or so to ensure that it doesn't clump together too much - it will not harden in "clusters," rather it ends up a little looser like cereal, which is great for sprinkling over yogurt.
- Store in airtight container.
- *VARIATION for adults: Replace crisp rice cereal with 2 cups nuts of choice - almonds, walnuts, pecans, sunflower seeds, pumpkin seeds, etc. or combination. Follow remainder of recipe as directed.
