NINFA'S RED SALSA

I have loved Ninfa's for a long time. Recently I found a book with handwritten recipes from several Texas area restaurants, so I'm sharing them.

Ninfa's Red Salsa image

Steps:

  • Place the dried chiles on a cookie sheet and toast in a 325-degree oven for 3 to 4 minutes. Stem and seed them, and then set aside.
  • In a medium skillet, simmer the tomatoes and garlic, in just enough water to prevent scorching until softened-about 20 minutes. Transfer to a blender and puree along with the cilantro, salt, toasted chiles, and if desired, jalapenos, for 1 to 2 minutes.
  • Sauté the pureed salsa in a skillet with hot oil for 1 to 2 minutes.
  • If the salsa is pale, you may wish to add some tomato sauce to deepen the color.
  • This salsa may be made in advance and either refridgerated or frozen.

1 -2 chiles de arbol
1 -2 dried red pepper, if you can't get chiles de arbol
4 medium tomatoes, halved
3 garlic cloves
4 sprigs cilantro
1 teaspoon salt
1 -2 jalapeno (optional)
1 -2 tablespoon oil (Recipe doesn't specify the type.)
1/2 cup tomato sauce (optional)

Ninfa's Fajitas image

Steps:

  • 1. Grate the orange and lemon zests. Combine the zest with the water, the pineapple juice, lemon juice, soy sauce, garlic, black pepper and chiles, in a large baking dish
  • 2. Using a sharp knife, remove any membrane or silver skin from the meat. In most supermarkets, this membrane will already have been removed. If the meat is thicker than 3/4″ thick at the thickest part, cut it in half horizontally (butterfly) so that it will cook evenly. Place the skirt steak in the marinade and turn to coat. Cover the dish with plastic wrap and marinate at room temperature for 2 hours if inside skirt steak... or, 1 hour if outside skirt steaks.
  • 3. On a charcoal or gas grill, grill the meat for 5-7 minutes on each side, or until done. Cut crosswise in one-half-inch strips and serve with grilled onions, jalapenos and server hot and steaming. The Laurenzo family also serves the fajitas on a table grill to keep them hot. Part if the evolution of the recipe that the family has made over the decades also includes a ramekin of drawn garlic/lemon butter to dunk the strips in when served.

2 teaspoons Lemon Zest
1/4 cup Water
1/4 cup Pineapple Juice
1/4 cup Soy Sauce
1 clove Garlic Minced
1 tablespoon Black Pepper
2 pieces Dried Chiles de Arbol (Crushed)
2 pieces Skirt Steaks (no more than 3/4 inch)

NINFA'S GREEN SAUCE

This green sauce is popular in many Mexican restaurants around Houston. Ninfa's was one of the first to serve this sauce. The recipe has been printed in the Houston Chronicle several times. I've adapted it slightly. Mama Ninfa Rodriquez Laurenzo opened the original Ninfa's Restaurant on Navigation street in 1973. Her food differed from the usual Tex-Mex restaurants in town. She seemed to achieve fame in the kitchen overnight. Some of her famous guests included George Bush, Michael Douglas, John Travolta, Rock Hudson, and Aerosmith! Mama Ninfa lost her battle with cancer last year, but her much loved Mexican food lives on. The original Ninfa's is still there, and there are several other locations here in Houston as well.

Steps:

  • Peel avocados and place them in a blender.
  • In a medium saucepan, boil tomates, tomatillos, garlic, and jalapenos for 15 minutes.
  • Remove from saucepan and place all ingredients in a blender with avocados.
  • Add sour cream and blend until smooth.

3 medium green tomatoes
4 fresh tomatillos
3 garlic cloves
3 sprigs fresh cilantro

1/2 teaspoon salt, to taste

CHICKEN FAJITAS LIKE MAMA NINFAS

A relatively quick and easy recipe - good for a week night. These taste similar to the Ninfa Fajitas - a popular restaurant dish.

Chicken Fajitas like Mama Ninfas image

Steps:

  • Prepare the grill (indoor or out) or the broiler.
  • Pound the chicken breasts to 3/4 inch thickness, and set aside.
  • Heat a heavy skillet over high heat for 3- 4 minutes.
  • Pour the wine into the skillet, and boil it for 1- 2 minutes to evaporate the alcohol.
  • Reduce heat to medium.
  • Stir in soy sauce, garlic, and pepper, and cook until they are just combined, about 1 minute.
  • Add butter and stir until just melted.
  • Remove skillet from heat.
  • Dip the chicken breasts into the sauce, and turn them to coat thoroughly.
  • Place breasts 3- 4" from heat source, or on in-door grill.
  • Cook a few minutes until done to your taste.
  • Remove from the heat and let it sit for about 5 minutes.
  • Slice the breasts into slim finger length strips.
  • To assemble the fajitas, pile a platter high with the chicken strips, and accompany the platter with tortillas, onion, pico de gallo, guacamole, tomatoes and bell pepper rings.
  • Let everyone help themselves.
  • For each serving, fill a tortilla with some of the chicken and portions of the garnishes.
  • Marinated onions: Reduce the stock to 1 cup in a small sauce pan.
  • Add soy sauce and chiles; stir.
  • Place onions in a medium bowl and pour the marinade over them.
  • Cover the bowl and refrigerate it for several hours or overnight.
  • Present the onions cold as a garnish, or heat them in the top of a double boiler and serve warm.
  • They'll keep at least 10 days.

1 tablespoon soy sauce
2 cloves garlic, minced
1 teaspoon fresh ground black pepper
20 flour tortillas (the fresher, the better)
sauteed onions or marinated onion (see recipe below)
pico de gallo
guacamole
tomatoes, slices
green bell pepper, rings
2 cups beef stock
1/4 cup soy sauce
2 dried arbol chiles, crushed or 2 fresh jalapenos, chopped
2 large onions, sliced into thin rings
