BEST CHEESE DIP
This dip has all the best ingredients I've found from various other recipes and it's my favorite by far! Serve as a dip at a party or with sour cream and jalapenos to make nachos and use it as a main course!

Steps:
- Heat a large skillet over medium-high heat. Crumble sausage and ground beef into the skillet; add the onion. Cook and stir the beef mixture until the meat is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease. Pour into a slow cooker.
- Layer cheese food cubes atop meat mixture.
- Blend diced tomatoes with green chile peppers in a blender until smooth; pour over the cheese cubes along with the cream of mushroom soup. Stir the mixture.
- Cook on High, stirring occasionally until the cheese is completely melted, about 90 minutes.

NOT CHEESE DIP
Really a full meal in sauce form. There are a lot of ingredients, but since it's combined in the blender, it's super easy. This is adapted from a recipe originally published in Vegan Lunchbox Around the World by Jennifer McCann. Whenever I ask my 8-year-old daughter if she wants something special for dinner, this is what she asks for. We dip tortilla chips in it, but it's good spread on burritos.

- Melt butter over medium-high in a large pot. Add onion and garlic; cook, stirring often, until onions are tender, about 5 minutes. Stir in chiles and salt, cooking just until heated through, 1 to 2 minutes. Add half-and-half, and continue stirring until warmed throughout and beginning to steam, about 5 minutes.
- Toss together cheeses and cornstarch in a small bowl. Reduce heat to medium, and add cheese, 1 handful at a time, whisking after each addition. Once fully melted and smooth, remove from heat. Serve immediately with tortilla chips. Add additional stir-ins, if desired.
