NOT YOUR BUBBIE'S MANDEL BREAD

Mandel bread (also known as mandelbrot) is similar to a biscotti but a little sweeter. This is a really simple and straightforward mandel bread recipe. Filled with chocolate chips and a hint of cinnamon flavor, the cookie is superb for dipping into hot chocolate, coffee or tea. But, they're just as yummy on their own....

Steps:

  • 1. Preheat oven to 350. Line a half sheet pan (or large cookie sheet) with parchment paper.
  • 2. In a mixer, cream together butter and sugar until fluffy.
  • 3. Add eggs one at a time making sure they get incorporated well.
  • 4. Add vanilla and continue to cream.
  • 5. Stop the mixer and scrape down the sides.
  • 6. Add 1 cup of the flour along with the baking powder and salt (here is where you would add chili powder if you want a kick). Continue to mix.
  • 7. Add the remaining 2 cups of flour one at a time to keep the batter light.
  • 8. Finally, add the chocolate chips.
  • 9. Mix until just combined.
  • 10. Dust your work space with flour and divide dough into 3 equal size balls.
  • 11. One at a time, roll the balls into long loaves and place onto cookie sheet.
  • 12. Slightly flatten each loaf until it is the desired shape of the cookies you'd like.
  • 13. Dust each loaf with cinnamon sugar and bake for 20 minutes.
  • 14. At the end of 20 minutes, take them from the oven and slice each loaf into 1/2" pieces.
  • 15. Lie them on their side back on the cookie sheet.
  • 16. Dust again with cinnamon sugar and put them back in the oven until lightly crisp (about 6-7 minutes).
  • 17. Cool slightly. Enjoy with coffee, tea, milk, or whatever you like.

2 stick unsalted butter
3/4 c sugar
3 large eggs
3 c all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
1 tsp pure vanilla extract
1 pkg chocolate chips
cinnamon, mixed with sugar for dusting
optional: dash of chili powder or cayenne pepper

AUTHENTIC MANDELBROT

I grew up in a Jewish neighborhood where a traditional snack was Mandelbrot. I so enjoyed visiting my friends as these homey cookies came fresh out of the oven with the most fantastic aroma. Luckily for me, one of the mothers shared this recipe and I've cherished and enjoyed it ever since.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread almonds onto a baking sheet and toast in preheated oven until fragrant, 6 to 8 minutes. Cool, then coarsely chop the almonds.
  • Reduce oven temperature to 325 degrees F (165 degrees C). Grease a baking sheet.
  • Combine butter, white sugar, brown sugar, vanilla extract, almond extract, lemon zest, and orange zest in a large bowl. Beat at medium speed with an electric mixer until well blended. Beat in eggs one at a time.
  • Whisk together flour, baking powder, and salt. Add to butter-egg mixture and mix on low speed just until blended. Stir in chopped almonds.
  • Divide dough in half. Grease hands to prevent sticking. On prepared baking sheet, shape each half into a flattened log, about 9 inches long, 2 1/2 inches wide, and 1 inch tall.
  • Bake in preheated oven until light brown, about 25 minutes. Remove from oven and allow to cool 5 minutes. Slice logs diagonally into 1/2-inch-thick slices. Arrange slices flat on baking sheet. Bake until bottoms are lightly browned, about 10 minutes. Flip cookies and bake until other sides are lightly browned, about 10 minutes more.
