CHEESY CHEDDAR BROCCOLI CASSEROLE
People who don't even usually like broccoli casserole beg me to make this comforting broccoli cheese casserole recipe. It's similar to a classic green bean casserole, but the melted cheese just puts it over the top. -Elaine Hubbard, Pocono Lake, Pennsylvania

- Preheat oven to 325°. In a large saucepan, combine soup, sour cream, 1 cup cheese and 1-1/4 cups onions; heat through over medium heat, stirring until blended, 4-5 minutes. Stir in broccoli. Transfer to a greased 2-qt. baking dish., Bake, uncovered, until bubbly, 25-30 minutes. Sprinkle with the remaining cheese and onions. Bake until cheese is melted, 10-15 minutes.

This sandwich is a little tangy from the tomatoes, a little spicy from the chipotle chilies,and just plain delicious.

Steps:
- Blend tomato paste, chilies and molasses in processor until smooth.
- Spread 1 tablespoon chipotle mixture over 1 side of each bread slice.
- Arrange 6 slices of bread, chipotle side up, on work surface.
- Divide half of cheese among bread slices.
- Top with tomatoes, then onion, cilantro, and remaining cheese.
- Top sandwiches with remaining bread, chipotle side down.
- Spread butter on outside of sandwich tops and bottoms.
- Heat a large griddle over medium heat.
- Place sandwiches on griddle, cook until bread is golden and cheese is melted, about 5 minutes on each side.
- Keep your heat on medium to low or the bread will burn.
- Eat the sandwiches warm from the griddle.

NOT YOUR MAMA'S MAC-N-CHEESE
No, it's not my mama's but my sisters! This is a unique recipe that requires no roux so the sauce is creamy not grainy as some can be. I make "Grown Up Mac-n-Cheese by replacing some of the cheese with gorgonzola (4oz to be exact) and giving it a crumb topping instead. This is easy enough for you to do as you like. I do recommend using several different types of cheese for complexity.

Steps:
- In a large pot bring water to boil and salt to boil. Add pasta and cook for half the time recommended on the box. Usually 5-6 minutes.
- Meanwhile, pour your milk into a large microwave safe bowl and heat until milk is hot, about 3-4 minutes.
- While the milk is heating, dump all of your cheese into a large bowl, removing one cup or so for the top, and add your cornstarch. Mix until all of the cheese is lightly coated in the starch. Add remaining ingredients and mix well.
- When milk is hot, start adding your cheese a handful at a time until each addition is melted. The milk will likely have to go back into the microwave to heat back up as the cheese will cool it down.
- When pasta is ready, drain and put into a 13x9 inch casserole dish sprayed with non stick spray. Pour sauce over the top and push around so that the sauce begins to move inside the pasta tubes.
- Sprinkle with remaining cheese and bake at 350 for about 30 minutes.

This came from a ladies group that met once a month where everyone brought their favorite dish and worked the afternoon on fund raising projects. It has since become a favorite dish for Sunday dinners, and potlucks at our house.

- cook broccoli until it comes apart and color is nice and green, drain.
- Arrange in a 9x9 or 8x8 greased pan.
- Top with cubed cheese.
- Melt the butter, add a couple drops of worcestershire sauce, crush the ritz crackers and add.
- Sprinkle over the casserole.
- Bake 325- 45min.

- Place broccoli and water in a large microwavable bowl. Cover loosely with plastic wrap, and microwave on HIGH until tender, about 8 minutes. Set aside.
- Melt 3 tablespoons of the butter in a Dutch oven over medium-high. Add onion, and cook, stirring occasionally, until softened, about 5 minutes. Add garlic, and cook, stirring occasionally, 1 minute. Sprinkle flour evenly over onion mixture, and cook, stirring constantly, 1 minute. Whisk in milk, and cook, stirring constantly, until thickened, about 2 minutes. Reduce heat to medium, and whisk in mayonnaise, mustard, salt, and pepper until smooth. Add cheese, and stir until melted and smooth. Add broccoli, and stir to coat. Transfer to a lightly greased 13- x 9-inch broiler-proof baking dish, and cool to room temperature, about 30 minutes. Cover with aluminum foil, and chill until ready to bake, up to 1 day ahead.
- Preheat oven to 350°F. Remove casserole from refrigerator while oven preheats. Bake, covered, until hot and bubbly, about 1 hour.
- Place remaining 1 tablespoon butter in a medium-size microwavable bowl, and microwave on HIGH until melted, about 15 seconds. Add crackers and parsley, and stir to combine. Sprinkle evenly over casserole. Increase oven temperature to broil on HIGH, and broil casserole until top is golden brown, about 1 minute. Let stand 10 minutes before serving.

- Preheat your oven to 400 degrees F. Melt 1 tablespoon butter in a wide, deep cast iron or other ovenproof skillet. Once melted, pour the butter into a small mixing bowl, then combine with the Panko breadcrumbs and the Parmesan cheese. Set aside.
