I remember my mom making these fruity bars for PTA meetings when I was in elementary school more than 40 years ago. Now I serve these bars for a variety of functions.

Apricot Squares image

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and extract. Combine the flour, orange zest, baking powder and salt; gradually add to creamed mixture and mix well. Set aside one-third for the topping. , Press remaining dough into a greased 13x9-in. baking pan. Combine preserves, lemon juice and zest; spread evenly over crust. , Crumble reserved dough over filling. Bake at 350° for 40 minutes or until golden brown. Cool on a wire rack. Cut into squares.

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In a small bowl, whisk flour and baking powder; gradually add to creamed mixture, mixing well. Fold in coconut and walnuts., Press two-thirds of dough onto the bottom of a greased 13x9-in. baking pan. Spread with preserves; crumble remaining dough over preserves. Bake 30-35 minutes or until golden brown. Cool completely in pan on a wire rack. Cut into bars.

Apricot Jam Bars image

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line an 8x8-inch baking dish with parchment paper.
  • Beat butter and caster sugar together in a bowl until smooth; beat in egg, almond extract, and vanilla extract.
  • Whisk flour, almond flour, baking powder, and salt together in a bowl. Stir flour mixture into butter mixture until a smooth dough forms.
  • Press 1/2 of the dough into the prepared baking dish. Spread apricot jam evenly over the dough. Drop remaining dough in small spoonfuls evenly over the jam.
  • Bake in the preheated oven until golden, about 25 minutes. Allow to cool before cutting into squares and serving.

I adopted this recipe late 2005 and finally made it in February 2006. I haven't changed a thing as it is great the way it is written. This slice has a shortcake like base with a cake-like apricot caramel top. Goes well with a dollop of whipped cream on top for a treat or dessert or leave plain and enjoy. :)

Steps:

  • In covered small saucepan over low heat, in enough water to cover, cook apricots 15 minutes.
  • Drain apricots; finely chop.
  • Preheat oven to 350 degrees Fahrenheit.
  • Grease an 8 x 8 inch pan.
  • Into large bowl, measure 1 cup flour, butter or margarine and sugar.
  • With mixer at medium speed, beat ingredients until well mixed and crumbly.
  • Pat evenly into pan.
  • Bake 25 minutes or until golden brown.
  • Meanwhile, in the same bowl, measure 1/3 cup flour, eggs, apricots, brown sugar, walnuts, baking powder, vanilla, and salt.
  • Beat at medium speed until well mixed, occasionally scraping bowl with a rubber spatula.
  • Pour mixture over baked layer and return to oven.
  • Bake 25 minutes longer until golden.
  • Cool in pan.
  • Cut into squares.
  • Sprinkle with confectioner's sugar.

  • Place the dried apricots into boiling water for 10 minutes; drain.
  • Chop cooled apricots; set aside.
  • Preheat oven to 350 degree F.

  • Press this mixture into prepared pan.
  • Bake 25 minutes; set aside.

Steps:

  • For shortbread layer:
  • Preheat oven to 350°F. Spray 8x8x2-inch glass baking dish with nonstick spray. Blend flour, sugar, and salt in processor. Add butter; using on/off turns, process until coarse meal forms. Press crumbs firmly onto bottom of dish. Bake until center is golden, about 25 minutes. Maintain oven temperature.
  • Meanwhile, prepare apricot layer:
  • Place apricots in small saucepan; add enough water to cover. Boil until soft, about 4 minutes; drain and set aside.
  • Sift flour, baking powder, and salt into small bowl. Using electric mixer, beat eggs in large bowl. Add brown sugar and vanilla; beat until thick. Stir in flour mixture, then nuts and apricots. Spread over shortbread.
  • Bake cookie until puffed, dark brown, and toothpick inserted into topping comes out with small moist crumbs attached, about 35 minutes. Cool in dish.
  • Cut cookie into 6 strips, then crosswise into thirds. Transfer to waxed paper. Sift powdered sugar over bars.

  • In a food processor - add flour, sugar, salt, vanilla extract, spice mix, and cold cubed butter. Pulse a few times - until crumbly. Not too much.Pro tip - we want a crumble with some small pieces and some large pieces of butter. These will give us a good texture and mouthfeel.
  • Fresh Apricots - wash the apricots, score a cross on the bottom skin, and blanch them in hot water for three minutes. Then drop them in cold water so the skin peels off easily.
