Coconut-Date Bites image

Steps:

  • In a food processor, pulse the dates to create a thick paste. Add the walnuts, vanilla and 1/4 cup of the coconut and pulse until incorporated and a thick paste forms again. Using a spatula, transfer the date mixture to a medium bowl.
  • Pour the remaining 1/4 cup coconut into a separate small, shallow bowl.
  • Using a spoon, scoop out about 2 tablespoons of the date mixture and, with clean hands, work into a small rectangular bar 2 to 2 1/2 inches by 1 inch (or roll into balls). Coat the date bar with the coconut in the bowl, delicately pressing the coconut onto the bar. Continue with the remaining date mixture and coconut.
  • Serve in mini paper cupcake liners. Store in an airtight container for up to 1 week.

Steps:

  • Preheat oven to 350 degrees, with racks in upper third and middle. In a medium bowl, whisk together flour and baking powder. Add dates, pecans, and raisins, and stir with a wooden spoon until fruit and nuts are coated. In a small bowl, whisk together eggs, 1/2 cup sugar, oil, lemon juice, vanilla, and salt. Add to flour mixture and stir until combined.
  • In another small bowl, stir together 2 tablespoons sugar and cinnamon. Drop dough by rounded tablespoons, 1 inch apart, onto parchment-lined baking sheets. Sprinkle with cinnamon sugar. Bake until cookies are golden at edges, about 15 minutes, rotating sheets halfway through. Transfer cookies to wire racks and let cool completely.

NUTTY DATE BITES

Pureed dates and walnuts rolled in unsweetened coconut. A nice treat made with natural sugars. Perfect for children; my 2 year old loves them! Make sure the dates do not have added sugar, you want them soft. You may use more or less coconut, so be sure you have enough!

  • Place the pitted dates and walnuts in the bowl of a food processor.
  • Puree until a smooth consistency.
  • Roll mixture in to balls using 1 teaspoon of puree for each ball.
  • Roll the balls into the coconut to cover.
  • Serve.
  • Can also be frozen.
