These are great for a quick lunch. You could even send them to school for something other than a sandwich. From Easy Everyday Cooking. Freeze these wrapped individually in foil for upto a month - thaw and reheat for 10 minutes or until heated through.

Mini Sausage Calzones (Oamc) image

Steps:

  • Divide dough into 16 portions.
  • Preheat oven to 425°F.
  • Grease a baking sheet.
  • Heat a large skillet over medium heat, add sausage.
  • Cook until brown and crumbly, drain fat.
  • Stir onion, garlic, basil, oregano, and pizza sauce into skillet, simmer for 10 minutes.
  • Roll each dough piece into a 5in circle.
  • Spoon sausage mixture onto each circle, sprinkle with cheeses.
  • Moisten edges of dough with water.
  • Fold dough over to enclose filling, press to seal.
  • Place on prepared baking sheet.
  • Beat eggs with milk.
  • Brush over calzones.
  • Bake for about 15 minutes or until golden brown.

Barbecue Chicken Basil Calzones (Oamc) image

Steps:

  • For the dough: Combine flour, baking powder, sugar and basil.
  • Add milk powder to water and stir until dissolved, add to dry mixture.
  • Add eggs and melted butter and mix well.
  • Set aside while making the filling.
  • For the filling: Cook onions in butter over medium heat until onions are tender.
  • Add chicken and mushroom pieces and cook 2 minutes.
  • Remove from heat and stir in barbecue sauce and cheese.
  • Divide dough into 4 pieces and roll out into 8 inch circles.
  • Place 3/4 cup - 1 cup of filling in each circle.
  • Fold dough in half and seal edges tightly.
  • Bake at 350°F for 15-20 minutes or until top begins to brown slightly.
  • For OAMC: Cool and freeze at this point.
  • Defrost in the oven or microwave before serving.
  • Serve warm with extra barbecue sauce to dip if desired.

Calzones With Sun-Dried Tomatoes and Garlic image

Steps:

  • Sprinkle yeast over 1 cup of warm water. Add sugar and stir gently. Let sit 10 minutes.
  • Combine flour and salt in mixing bowl. Sir in yeast mixture and oil. Turn out onto a lightly floured surface and knead until smooth and elastic for about 5 minutes.
  • Place dough in lightly oiled bowl and turn to coat. Cover with a towel and let rise until doubled, about 45 minutes.
  • Punch down dough and divide into 6 portions. Cover and let sit for 30 minutes.
  • Preheat oven to 350F.
  • Remove tops of garlic heads. Place garlic in small oven safe bowl, drizzle with oil, and bake until soft, about 1 hour. Remove garlic and when cool enough to handle, remove cloves.
  • Put tomatoes in a bowl of warm water for 15 minutes then train. Thinly slice and put into a mixing bowl.
  • Combine parsley, scallion, and oil in a small bowl.
  • Working with the dough one portion at a time, place on lightly floured surface and roll out until 1/8 inch thick. Keeping a 1 inch border around the edge spread out 1/6 of the following ingredients: scallion mixture, garlic, basil, fontina cheese, mozzarella cheese, and tomatoes.
  • Moisten the edge of the dough with water and fold dough in half to enclose the fillings. Fold half of the border back and crimp with fork.
  • Refridgerate for 1 hour. Calzones can be wrapped in plastic and frozen for OAMC.
  • Place oven rack in lowest position and pre-heat to 450°F Sprinkle cornmeal over large baking sheet and place calzones on top. Spray with fine mist of water. Bake, spraying with water again about halfway through. Cook for 30 minutes until golden brown.

Homemade Calzones with Fillings Bar image

Steps:

  • For the dough: Lightly oil a large bowl. Combine the yeast, salt, sugar and 2 1/4 cups of the flour in the bowl of a stand mixer fitted with the paddle attachment and stir to combine. With the mixer running, add the water and oil. Beat until the dough comes together, about 2 minutes. If the dough is too wet, add more flour, 1 tablespoon at a time, until it is still soft and slightly sticky, but you can turn it out. Transfer the dough to the oiled bowl and cover with plastic wrap. Let stand until doubled in size, about 1 hour.
  • For the calzones: Preheat the oven to 500 degrees F. Line a large rimmed baking sheet with parchment paper.
  • Mix together the mozzarella, ricotta and Parmesan in a medium bowl. Set aside.
  • Lightly flour a work surface. Turn out the dough and divide it into 4 pieces. Gently pull and stretch each piece of dough into a 7- to 8-inch round, trying to keep the thickness of the dough fairly even. Lay out the rounds and spoon one-quarter of the cheese mixture onto one side of each round (about 1/2 cup per round). Spoon about 2 tablespoons of the Homemade Pizza Sauce onto the cheese. Add up to 1/3 cup of your preferred topping onto each of the calzones, then fold the side of the dough over the fillings. Fold and crimp the edges to seal them completely.
  • Transfer the calzones to the prepared baking sheet and brush them lightly with oil. Use a sharp paring knife to cut 1 or 2 vents into each, then bake until deep golden brown, about 18 minutes.
  • Serve with additional Homemade Pizza Sauce on the side, if desired.
  • Heat the oil in a medium saucepan over medium-high heat. Add the oregano, garlic and red pepper flakes and cook, stirring, until the garlic is golden brown, 1 to 2 minutes. Add the tomatoes, basil and 1/2 teaspoon salt and bring to a simmer. Reduce the heat to medium and simmer, with the saucepan loosely covered in foil to avoid splattering and stirring occasionally, until fairly thick, 5 to 10 minutes, depending on your tomatoes. Remove the basil.

Steps:

  • Thaw two loaves of bread dough.
  • Divide each loaf into five parts each.
  • One at a time, roll each dough piece on a floured board or stretch with your hands, making 10 7 inch squares.
  • Fold each dough square over half a cheese slice to form a turnover, and pinch edges to seal.
  • (You can also ladle 1/3 cup to 1/2 cup sauce into center of each square before making the turnover, but the sauce tends to seep out). Place each turnover in a small sandwich bag.
  • Put 5 turnovers in a 1 gallon freezer bag.
  • Divide sauce in half, and store in 2 1-quart freezer bags; enclose each bag of sauce in a bag of calzones.
  • Do the same with the remaining 5 turnovers.
  • To prepare for serving, thaw sauce; heat in a medium pan 10-15 minutes until bubbly.
  • At the same time, take frozen turnovers out of bags, and place them about 2 inches apart on a baking sheet sprayed with a nonstick spray.
  • Preheat oven to 350°F.
  • Bake for 15 minutes.
  • Turnovers will be golden brown when done.
  • Ladle sauce on top of turnovers, and serve.

Steps:

  • Cook the rice according to package directions, let cool. Mix the onions, parsley, basil, garlic, oregano, salt, and pepper into the ground beef. Saute until the meat is browned and all of the red is gone. After sauteing, drain the beef and cool (best if refrigerated). When beef has cooled, add sauces, cheese and bread crumbs 1/2 a cup at a time. Mix in well, result should not be too stiff. Adjust if necessary with bread crumbs or sauces. Check to be sure the seasonings are to taste.
  • Roll out the dough into approximately 6-inch circles, put in 1/3-cup meat mixture and fold over like an apple turnover. Squeeze edges with a fork and deep fry until golden brown.

Steps:

  • Combine 1st 8 ingredients on a 15 X 10 X 1" jellyroll pan; stir well, and spread evenly.
  • Bake at 425F for 45 minutes, stirring every 15 minutes.
  • Spoon vegetables into a bowl, stir in cheese and basil.
  • Divide dough into 8 equal portions.
  • Working with 1 portion at a time (cover the rest of the dough so it doesn't get dry), roll each portion into 7" circle on a lightly floured surface.

Steps:

  • Saute chicken, onion, garlic and zucchini in a large non stick fry pan until no pink remains in chicken and liquid is evaporated.
  • Stir in tomato sauce, oregano, basil, pepper and chillies flakes. Heat, uncovered on low for 10 minutes until thickened. Remove from heat. Let stand to cool slightly; stir in cheeses. Set aside.
  • Combine whole wheat flour, first amount of all purpose flour, baking powder and salt in a large bowl; make a well in the centre.
  • Combine canola oil and first amount of milk in a small bowl; add all at once to the dry ingredients; stir with a fork, just until moistened.
  • Turn out onto a lightly floured board using second amount of all purpose flour; gently knead dough 8 to 10 times. Divide dough into 8 portions; roll each out to a 6 inch circle. Place 1/3 cup filling to one side of centre, moisten edge of dough with some of the second amount of milk. Bring unfilled side of dough over filling and press edges together with fork tines to seal well. Cut slits in top with tip of a sharp knife; place on greased baking sheet. Brush with remaining milk; bake in 400F degree oven for 15 to 18 minutes until golden brown.
  • Diabetic choices: 2 starch; 1/2 fruit & veggies; 1 1/2 protein; 1 fat & oil.
