CHEESY HASH BROWN EGG CASSEROLE WITH BACON
"Isn't it about time for you to make your 'egg pie?'" my husband and sons inquire, using the nickname they've given this hearty breakfast casserole with bacon. Hash brown casseroles are nice enough for a special brunch and versatile enough for a satisfying family supper. -Patricia Throlson, Willmar, Minnesota

OAMC-HASH BROWNS, SAUSAGE, BACON AND EGGS.
This makes 16 servings. At sams club they sell these big bags of precooked bacon, it's a 1 pound bag, I use that instead of cooking the bacon myself. Same for the sausage, the precooked sausage I buy is cheaper than the sausage I have to cook. If you cook the bacon yourself, salt the dish. You can really cut the time on this if you do like I did and it's not more expensive!!! Use precooked bacon (if you can get it cheap like I did), precooked sausage and a cheese mix blend. I put it together in under 10 minutes, that includes cracking and stirring the eggs.

- Remove from oven, reduce temperature to 350.
- Put half of the chopped meats, and cheeses on the "crusts" in each pan.

- Let it stand for about 15 minutes before you put it in containers to freeze.

- This is really good if you alter this in lots of ways! You can use chorizo (mexican sausage) and salsa for a nice twist.

BROWN SUGAR OATMEAL PANCAKES
My family absolutely loves these oat pancakes. I make them every Saturday and Sunday. If I don't, they don't believe it's the weekend! My son's friends often spend the night, and I think it's because they like these oatmeal pancakes so much. They are especially delicious served with molasses and syrup. -Sharon W. BREAKFAST SAUSAGE HASH BROWNS CASSEROLE (W/O EGGS)
I got this recipe from a chef at a hotel where I was staying several years ago. I always make it for our family brunches. It is good for the ones who can't (or won't) eat eggs. It is a big family favorite.
