APPLE CRISP WITH OAT TOPPING
This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease 4 12-cup mini-muffin tins.
- Mix apples, water, white sugar, and 1/2 teaspoon of cinnamon together in a saucepan, and bring to a simmer over medium-low heat, stirring occasionally. Simmer until apples are partially cooked, about 5 minutes; remove from heat.
- Combine flour, oats, brown sugar, 1 teaspoon of cinnamon, and nutmeg in a large bowl; cut the butter into the flour mixture with a pastry cutter until the mixture looks like coarse crumbs. Place a heaping tablespoon of the crust mixture into a mini muffin cup, and press it into the cup so that it covers the bottom and pushes up the sides of the cup. Make the crust go all the way to the top of the little muffin cup, and patch any holes with more crust mixture. There will be crust mixture left over. Place about 2 teaspoons of apple filling in the crust. Sprinkle about 1 teaspoon of the remaining crust mixture on the filling.
- Bake in the preheated oven until golden brown, 15 to 20 minutes.

- No-Bake Cookies. Since this is a no-bake recipe, you’ll be left with a wonderful chewy texture from the oats. Though if you wanted something a little more crisp, try baking your oats for about 5 to 10 minutes to give them a nice toasty texture.
- Apple Crisp. I don’t know anybody that would turn away a bowl of warm apple crisp. It’s sweet, spiced, fruity, and covered in a crunchy oat topping that is to die for.
- Oatmeal Pie. I have to preface this by saying: if you’re not a fan of oatmeal cookies, then this might not be for you. Want to save this recipe? Enter your email below and we'll send the recipe straight to your inbox!
- Oatmeal Carmelita Bars. Carmelitas are typically made up of an oatmeal shortbread base, topped with chocolate chips, pecans, caramel, and finished with more of the shortbread crust on top.
- Jam Filled Oatmeal Bars. As much as I like the caramel version from above, I think the jam bars might be my favorite. I just love the bright color of the jam!
