OATMEAL BREAKFAST BARS

This soft, chewy oatmeal breakfast bar recipe has a hint of orange marmalade, so they're a fun change of pace from typical granola bars. They're so easy to put together and so delicious, you'll find yourself making them all the time. -Barbara Nowakowski, North Tonawanda, New York

Steps:

  • In a large bowl, combine the oats, brown sugar and salt. Stir in remaining ingredients. Press into a greased 15x10x1-in. baking pan. Bake at 425° for 15-17 minutes or until golden brown. Cool on a wire rack.

Blueberry Oatmeal Breakfast Bars image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square pan.
  • Combine whole oats, oat flour, brown sugar, salt, and baking soda together in a bowl. Stir in almond milk, eggs, butter, and vanilla extract until well combined. Fold in blueberries and walnuts. Spread mixture into prepared square pan; top with shredded coconut.
  • Bake in the preheated oven until edges are golden and coconut is brown; about 35 minutes. Cool in the pan for 10 minutes before cutting into squares.

Steps:

  • Preheat oven to 375 degrees F.
  • Grease a 9 inch by 13 inch pan, or two 8 inch by 8 inch pans.
  • Combine all ingredients in bowl and mix well.
  • It should be moist enough to form a ball, without extra liquid.
  • Put mixture in prepared pans and spread evenly.
  • Bake for 30 minutes.
  • Remove from oven and cut into squares while still hot.
  • Wait until the bars cool before trying to remove them from the pan.
  • One tip: if the fruit is hard, soak it with a bit of water before starting to make this recipe because the fruit doesn't soften much in baking.
