- In a large bowl, cream the butter, shortening and sugars until light and fluffy. Beat in eggs and vanilla. Beat in carrots. Combine the oats, flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in walnuts and chocolate chips. Cover and refrigerate for at least 4 hours., Drop by rounded tablespoonfuls 3 in. apart onto baking sheets coated with cooking spray. Bake at 375° for 10-13 minutes or until lightly browned. Cool for 2 minutes before removing to wire racks.

- Combine honey and coconut oil in a large bowl; beat with an electric mixer until creamy. Add carrots and eggs and mix well.

- 1. Preheat oven to 350 degree F. Lightly grease baking sheet. Beat butter with sugars in a large bowl ( I used my Kitchen Aid) until light and fluffy.
- 2. Add the eggs and beat until well incorporated. Now, beat in the flour, baking soda, baking powder, cinnamon, carrots and raisins. Stir in the oatmeal lastly, until well incorporated.

- Preheat oven to 350F and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt and cinnamon.
- In a large bowl, cream together the butter and sugar. Beat in the egg, followed by the carrots and vanilla. Using your hands, stir in the flour mixture and the oats until just combined, adding the milk 1 tablespoon at a time until fully combined. This will be really really sticky, don't worry!

I had to add more apple sauce because my dough was too dry. I also added 2 T honey. I rolled out the dough onto cookie sheets and cut into squares before baking, topped with cinnamon sugar and baked for a long time until very crispy. I also did not chill my dough.

- Preheat oven to 350 degrees. Place the dry ingredients into a food processor fitted with the "s" blade. Process until very finely ground (not as fine as oat flour, still a little coarse).
- Add wet ingredients and shredded carrot, and process until the mixture forms a cohesive ball. It may take a few minutes but it will happen. I had to pulse and scrape quite a bit, so as not to kill my processor.
- Remove dough, finish forming into a ball with your hands. Chill the dough if it is too soft for 20 to 30 minutes. Then place on parchment or waxed paper for rolling. Roll out dough. Cut into shapes with a cookie cutter.
- Place onto a parchment-lined baking sheet. Bake for approximately 15 to 20 minutes (Ali's original recipe took 15, but mine took 20), until golden and crisp. Cool on a wire rack. Serve as is, or spread with a thin layer of coconut butter icing. If icing, you can serve immediately or let icing set. Store in an air-tight container.

CARROT OATMEAL COOKIES
I found basis of this recipe in one of my MIL's magazines. Since I have my husband on a diet restricting meat, dairy, processed sugars, and white flour, I am trying to find creative ways to help satisfy his sweet tooth. These aren't very sweet but bake up nicely and "hit the spot". You could also add 1 cup of chocolate chips if you want it a little sweeter. What a wonderful way to eat your carrots!!!
