RUSTIC OATMEAL CORNBREAD
Are you looking for something different in making cornbread? This adds a nutty, rustic flavor to traditional southern cornbread. The recipe is adapted from one appearing in the Fort Worth Star Telegram newspaper by Amy Culbertson.

Steps:
- Preheat oven to 450 degrees.
- Mix together dry ingredients.
- Stir in beaten eggs, butter, & milk.
- Add enough additional butter or oil to cover the bottom of a 9 or 10 inch cast iron skillet and place pan in hot oven.
- When the pan is very hot, remove from the oven & pour the cornbread batter into the skillet.
- Return to oven & bake approximately 15 minutes until browned.
- Cut into wedges to serve.

Steps:
- Warm bacon grease in cast iron pan or skillet in oven at 400 degrees.
- While grease is warming, mix dry ingredients.
- Add egg and enough milk to make with consistency.
- Remove pan from oven and drain grease into mixture.
- Mix well and add back to pan.
- Cook for approx 30 min or until toothpick comes out of center clean.
- Bread will be nicely browned.

- Preheat oven to 350 degrees. Whisk together flour, cornmeal, anise seeds, baking powder, and 1/4 teaspoon salt in a medium bowl.
- Beat butter and 1/2 cup sugar with a mixer on medium speed until pale and fluffy, about 2 minutes. Beat in whole egg and zest. Reduce speed to low, and beat in flour mixture.
- Press dough into an even 1/4-inch thickness on a parchment-lined baking sheet. Brush with egg wash; sprinkle with almonds and remaining tablespoon sugar. Bake until golden, 22 to 25 minutes. Let cool on a wire rack. Break into pieces.
BEST EVER PINTO BEANS
I learned to make pinto beans from my Grandma, who came from Oklahoma. I've added to the recipe, and my Mother used to say mine were the best beans she'd ever tasted. Serve the Southern way - with cornbread and steamed greens.

- Cover pinto beans with water in a large bowl. Soak beans for 4 hours, changing water every 30 to 45 minutes. Drain.
- Bring 6 cups water to a boil in a large pot. Add pinto beans, ham hock, and kosher salt to the pot. Pour in more water if needed to cover ingredients by at least 1 inch.
- Reduce heat to medium-low and simmer until beans are just tender, 2 to 3 hours.
- Remove ham hock from beans; cut meat from the bone, chop the ham, and return to pot.
- Stir tomato sauce and brown sugar into the beans. Continue to simmer until beans are tender and flavors are blended, about 1 more hour.

OKIE BEANS
My husband asked me to make beans when we first got married. He told me how and went to work looking forward to beans for dinner. Well he was very dissapointed. I was used to really thick baked beans...so...I poured out all the juice! This recipe is almost like soup. For those who like thicker beans just cut down on the water, but the beans will be thicker the next day. Ham shanks usually come in a package cut up into 2 or three portions. This is one of those recipes that you can tweak to suit your taste.

- Put beans, onions, shank in a 3 quart dutch oven.
- Add water. More or less to taste.
- Add salt and hot sauce.
- Cover and place in a preheated 250 oven for 8 hours.
- Check after 4 hours and add water if needed.
- When ready to serve, take out ham shanks and remove bones.
- Shred meat with 2 forks and add back to beans.
- Serve with cornbread or homemade biscuits and fried taters.

HAMBURGER STEW
I love this stew because it is so easy to throw together,and it goes great with a hot pan of cornbread. I suggest Sweet Cornbread (recipe #83625). This recipe was my Great Grandma's and my Grandma taught it to me. It was hard for me to put this in recipe format because it is all in my head. You can adjust some of the ingredients to suit your family.

- Brown hamburger, garlic, salt, black pepper, and oregano in a Dutch oven over medium heat; drain.
- Return meat to pot.
- Add Worcestershire sauce, potatoes, onions, carrots, tomatoes, green beans, corn, peas and tomato sauce.
- Stir to combine.
- Over medium-high heat bring to a slight boil; reduce heat to low; cover.

- Heat the oven to 400°F. Spray the bottom and sides of an 8-inch square pan or 9-inch round cake pan with the cooking spray.
- In a 1-quart saucepan, heat the butter over low heat until melted.
- In a large bowl, beat the melted butter, milk and egg with a fork or wire whisk until well mixed.
