SHRIMP SCAMPI
This quick scampi is perfect over pasta or by itself with fresh-squeezed lemon. It serves 2 as a main course and 4 as an appetizer; and it's easy to double for a crowd.

- Put the shrimp on a large disposable pie pan or paper plate and pat them completely dry with a paper towel. Arrange the shrimp so they lay flat and are evenly spaced.
- Heat a large skillet over medium heat. Season the shrimp with salt and pepper. Add the butter to the skillet. When the foaming subsides, raise the heat to high and invert the plate of shrimp over the skillet so the shrimp fall into the pan all at once. Cook the shrimp, without moving them, for 1 minute. Add the garlic and cook for 1 minute. Turn the shrimp over and cook for 2 minutes more. Transfer the shrimp to a bowl.
- Return the skillet to the heat and pour in the vermouth and lemon juice. Boil the liquid until slightly thickened, about 30 seconds. Scrape up any browned bits from the bottom of the pan with a wooden spoon. Stir the lemon zest and parsley into the sauce. Pour the sauce over the shrimp, season with salt and pepper to taste and toss to combine.
- Divide the shrimp among plates or arrange on a platter and serve.

- In a bowl, combine the garlic, zest and juice of 1 lemon, olive oil, red pepper flakes, salt and pepper, to taste, and the shrimp. Set aside.
- Meanwhile make a quick shrimp stock: In a small pot, over medium heat, add the shrimp shells and onion. Cover with water and bring to a boil. Reduce the heat and simmer for 20 minutes. Strain into a bowl and discard the shells and the onion.
- Bring a large pot of water to a boil over high heat and add a generous amount of salt. Add the linguini and cook until just tender, 2 minutes less than instructed on the package. Drain and reserve 1/2 cup of cooking water.
- Heat a skillet over high heat. Add the shrimp and cook until they turn pink and start to caramelize, about 3 minutes. Remove the shrimp from the pan to a plate and add the remaining marinade. Let cook a few minutes then add about 1 cup of shrimp stock and about 1/2 cup pasta water. Continue to cook until sauce reduces by half. Add the zest and juice of the remaining lemon, the butter and the parsley and stir to combine. Adjust seasoning with salt and pepper, to taste. Add in the shrimp and pasta and toss to combine with the sauce. Turn out into a serving bowl and serve immediately.

- In a large pot of boiling salted water, cook pasta according to package instructions, then drain.
- Meanwhile, in a large skillet, heat oil over medium-high. Add shrimp and cook until opaque throughout, about 3 minutes, flipping once. Transfer to a plate.

- 1. Cook orzo according to package directions, omitting salt and fat. Drain. Place orzo in a medium bowl. Stir in parley and 1/4 teaspoons salt; cover and keep warm.
- 2. While orzo cooks, melt 1 T. butter in a large non stick skillet over medium-high heat. Sprinkle shrimp with remaining 1/4 teaspoons salt. Add half of shrimp to pan; saute 2 minutes or until almost done. Transfer shirmp to a plate. Melt 1 tsp butter in pan. Add remaining shrimp to pan; saute 2 minutes or until almost done. Tranfer to plate.
- 3. Melt remaining 1 T. butter in pan. Add garlic to pan; cook 30 seconds, stirring constantly. Stir in shrimp, juice, and pepper; cook 1 minute or until shrimp are done.
- 4. Put orzo onto a platter, shrimp and sauce on top.

- In a large shallow pan, turn on medium-high heat. Heat the olive oil and begin to melt the 3 tablespoons of butter. Once the butter has melted and the oil and butter begin to bubble, add the diced onions and cook until translucent. Once the onions have cooked, add the minced garlic and cook until fragrant, about 2-3 minutes.
- Add the white wine, lemon juice, and extra 2 tablespoons of butter. Allow the wine to simmer for 2-3 minutes.
- Add the heavy cream and bring to a simmer. Once the cream begins to simmer, add the grated parmesan cheese, red crushed pepper flakes, salt, pepper, garlic and onion powder, and fresh basil. Stir to combine and simmer for 2 minutes.
- Add the shrimp and ravioli to the pan and use a spatula or flat spoon to fold together. Once well combined, cover with lid and allow to simmer for about 7-10 minutes. Top off the dish in the pan with an extra ⅓ cup of grated parmesan cheese and serve.
