60 Ritz crackers, rolled fine
1/3 cup butter, melted

1 (15 ounce) can eagle brand sweetened condensed milk

OKRA ORANGE SURPRISE

I created this stir-fry recipe because I love okra and was tired of making the same old recipes. I used baby whole okra, but cut okra would work, too. I am on a very low sodium diet, so use a special salt-less Shoyu, which may be hard to find. Other soy sauce can be substituted, but will greatly increase the amount of sodium. I freeze extra zest whenever I have lemons, and save it to use in recipes like this.

Steps:

  • Heat the oil in a frying pan and add the frozen okra. Reduce heat to medium, cover and cook until the okra is thawed. (The thawing okra will add about half a cup of liquid to the pan. If it doesn't, then add some water, if needed.).
  • Add ginger, lemon zest and Shoyu, stir and cook uncovered until almost dry.
  • Add orange juice and honey. Stir frequently, turning okra to coat it well. Cook until sauce is reduced and has become sticky. Remove from heat and serve.

ORANGE SURPRISE

A quick, simple and delicious treat. Sometimes I top it off with some orange zest for color. Don't laugh...it's simple, but delicious and quick and I've never found any one who didn't rave about it!

  • Toss the okra with the olive oil and sea salt and spread them out on the prepared baking sheet in a single layer. Roast the okra for 25 minutes.
  • While the okra is roasting, prepare the glaze. In a small frying pan over high heat add the orange zest, orange juice, balsamic vinegar, honey, and garlic. Bring it to a boil and let it boil rapidly, whisking occasionally until it has reduced by half, about 5 minutes. If it reduces a little too much, just add another splash of orange juice or water.
  • Once the okra is nicely browned remove it from the oven and toss it with the orange glaze. Serve the okra with orange slices and a little fresh cracked pepper.

  • Southern Fried Okra. Good ol' fashioned fried okra—yum! It comes with an extra crispy, golden crust thanks to a breading mixture of cornmeal, flour, and a dash of cayenne pepper.
  • Air Fryer Okra. Of course, okra is healthier in the air fryer! The tender pods are coated in a light breading, then cooked to crispy perfection using a fraction of the oil.
  • Grilled Okra. Just like kebabs and veggies, you can grill fresh okra over an open flame. In fact, the smoky, charred flavor nicely complements the natural sweetness of the okra.
  • Pickled Okra. Skip the traditional canning method: fresh okra, dill, and spices, are quickly brined in a vinegar solution. The result is crunchy, tangy and packed with flavor—a perfect accompaniment to salads or sandwiches.
  • Oven Roasted Okra. Here's an easy way to cut down on the "slime" of fresh okra: Simply toss the halved pods with olive oil and spices, layer them on a baking sheet and pop them in the oven for 20 minutes.
