OKRA PATTIES
My favorite way to use okra, and besides...it is good. I usually make this in the summer when okra is plentiful, but I have also used frozen okra successfully. NOTE: I should have put this notice here before, but just didn't think! Okra should be chopped by hand. The food processor makes it way to slimey to work with.

Steps:
- Combine okra, onion, salt, pepper, water, and egg and mix well.
- Mix flour, baking powder, and cornmeal and add to okra mixture, mixing well.
- Heat oil to medium-high, drop okra by heaping tablespoons into hot oil and cook until brown on both sides.

- Combine cut okra, onion, salt, pepper, water and egg. Mix well. Combine flour, baking powder, cornmeal and garlic powder. Add to okra mixture, stirring well. Drop about 1/4 cup portions into about 1/2" hot oil. Fry over medium heat until well browned on both sides. Drain on paper towels.

This is the time of year I always have an abundance of okra in the garden, so I'm always looking for new and different ideas on how to use it. This is very good and makes a wonderful side dish to any meal.

Steps:
- 1. Wash okra, drain and slice. Slice the okra a little thinner then you would if you were just frying the okra.
- 2. In large mixing bowl, mix salt, baking power, cornmeal, flour and egg. Add water and mix well. Stir in okra.
- 3. Drop by spoonfuls into small amount of hot oil in skillet and fry as you would a pancake, turning to brown each side. Each side takes about 10 minutes over medium heat.

- In a large, heavy skillet, heat oil over medium. In a medium bowl, combine flour, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Add okra and onion and toss to coat. In a small bowl, whisk together egg and buttermilk. Add to okra mixture and stir just until combined.
- In two batches, drop batter in 2-tablespoonful mounds into oil. With a small spatula or butter knife, gently flatten each mound and fry until golden, about 4 minutes per side, flipping once (adjust heat if browning too quickly). Drain on paper towels. Season with salt and serve warm. Makes about 10.

In the South, okra is every where. I threw together this recipe when trying to come up with something different. When I make this for the kids, I leave out the tomatoes and onion.

- Combine okra, tomato, and onion in a large bowl. Add the grits, eggs, salt, and pepper and blend together using your hands.
- Heat oil in a cast iron skillet over medium-high heat. Form patties 2 1/2 inches in diameter, about 1/2 the size of a hamburger. Place the fritter in the pan and cook until golden brown, about five minutes. Flip with a spatula and cook until browned on the other side, about five minutes more. Remove and drain on paper towels. Serve immediately.
