Hearty Beef and Barley Soup image

Steps:

  • In a large saucepan, heat oil over medium heat. Brown beef on all sides; drain. Stir in broth, water, barley, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 1 hour. , Add carrots, celery, onion and parsley; cover and simmer until meat and vegetables are tender, 30-40 minutes. Stir in peas; heat through.

1 tablespoon canola oil
3 cans (14-1/2 ounces each) beef broth
2 cups water
1/3 cup medium pearl barley

Old-Fashioned Beef and Barley Soup image

Steps:

  • Sprinkle the beef evenly with 2 teaspoons salt and 1 teaspoon pepper.
  • Heat the oil in a large skillet over high heat.
  • Add in the meat a few pieces at a time and brown on all sides.
  • Transfer the browned meat to the insert of a 5-7 quart slow cooker.
  • Add the garlic, onions, mushrooms, and thyme to the same skillet over med-high heat and saute until the liquid from the mushrooms is evaporated.
  • Transfer the contents of the skillet to the slow cooker.
  • Add the carrots and celery to the slow cooker and stir to combine.
  • Deglaze the skillet with the tomato paste and wine and allow the wine to reduce by about 1/4 cup, stirring up any browned bits from the bottom of the pan.
  • Transfer the tomato mixture to the slow cooker and add the broth and barley.
  • Cover the slow cooker and cook on LOW for 6-7 hours, until the beef and barley are tender.
  • Season with salt and pepper, if needed before serving.

A slow cooker makes this the easiest recipe ever. It has become a regular family favorite. So much so, that I was requested to bring it to Christmas Eve dinner. I usually use leftover boneless beef short ribs.

Slow Cooker Beef Barley Soup image

Steps:

  • In a skillet over medium heat, saute the beef in the oil for 5 minutes, or until browned. Stir in the salt, pepper and garlic powder and place seasoned meat in a slow cooker. Add a little water to the skillet and stir to pick up the browned bits. Add to the slow cooker.
  • Add the broth, water, celery, carrots, green onions, parsley and barley. Cover and cook on low setting for 6 to 8 hours, or until the vegetables and barley are tender. Add the thyme just before serving.

OLD-FASHIONED VEGETABLE BEEF SOUP

Better than Campbell's but just as comforting! Loosely based on a gourmet cooking magazine's recipe for Beef Barley soup, I didn't have any barley or okra, so I added root veggies to make it more hearty, like a rich broth with the chunkyness of stew. It turned out to be the best soup I've ever made! DH, stepson and baby girl kept coming back for more.

Old-Fashioned Vegetable Beef Soup image

Steps:

  • Cut meat into small, bite-size (1/2") pieces.
  • In a large pot or dutch oven, saute meat in 1 T oil on medium-high heat until all sides are brown.
  • Set aside on a plate.
  • Chop celery, onion, potatoes, and carrots into bite-size pieces.
  • Saute celery and onion in remaining 1 T oil until onion is golden (about 10 minutes).
  • Add browned beef, water, broth, tomatoes with juices, carrots, potatoes, corn, bay leaves and garlic.
  • Bring to a boil.
  • Reduce heat and simmer uncovered until beef is almost tender, about an hour.
  • Add peas and hot sauce to soup.
  • Cover and simmer until beef is tender, about 30 minutes longer.
  • Serve and season with freshly ground black pepper, hot sauce, or crumbled saltines, if desired.

Steps:

  • In a slow cooker, cook chuck roast until very tender (usually 4 to 5 hours on High, but can vary with different slow cookers). Add barley and bay leaf during the last hour of cooking. Remove meat, and chop into bite-size pieces. Discard bay leaf. Set beef, broth, and barley aside.
  • Heat oil in a large stock pot over medium-high heat. Saute carrots, celery, onion, and frozen mixed vegetables until tender. Add water, beef bouillon cubes, sugar, 1/4 teaspoon pepper, chopped stewed tomatoes, and beef/barley mixture. Bring to boil, reduce heat, and simmer 10 to 20 minutes. Season with additional salt and pepper to taste.

  • In a large Dutch oven, heat oil over medium-high heat. Season beef with salt and pepper, to taste. When the oil shimmers, add the beef and brown on all sides (it doesn’t need to be cooked through – just make sure it gets nice color on the outside) – about 10 minutes. Use a slotted spoon to remove the meat from the pot and set it aside (leave the fat in the pot).
  • Add the carrots, celery and onion to the pot. Cook, stirring occasionally, for 10 minutes. Scrape up all of the flavorful beef bits from the bottom of the pot as you stir! Add mushrooms and garlic and cook, stirring, for one more minute. Stir in the tomatoes, thyme, bay leaves and broth. Return the beef to the pot. Season with ½ teaspoon salt and ¼ teaspoon pepper.
  • Increase the heat and bring soup to a boil. As soon as the soup boils, reduce the heat to low, cover, and simmer for 1 hour (or until beef is tender). Add the quick barley, cover, and simmer for 10-15 more minutes (or until barley is tender).
