SEVEN-MINUTE GOOEY CHOCOLATE FUDGE MICROWAVE CAKE

This 7-minute gooey chocolate cake recipe is one I have known since I was a child. It is a great one to rustle up in the microwave if you are in need of a quick chocolate fix, as it comes out as a chocolate sponge cake with a delicious sauce hidden at the bottom. Great with ice cream!

Seven-Minute Gooey Chocolate Fudge Microwave Cake image

Steps:

Mix flour, sugar, 1 ounce cup cocoa powder, and salt together in a bowl. Add egg, milk, melted margarine, and vanilla extract. Stir well to combine and transfer to a large microwave-safe bowl with sides at least 2 inches high.
Combine brown sugar and 1 ounce cocoa powder in a bowl. Sprinkle on top of the batter in the microwave-safe bowl. Pour warm water gently over the cake; use a fork to gently prick a few holes in the cake to allow water to seep in.
Cook in the microwave on high power for 5 minutes. Serve with ice cream or custard.

Microwave chocolate and milk in large microwavable bowl on HIGH 2 to 3 min. or until chocolate is almost melted, stirring after each minute. Stir until chocolate is completely melted.
Add nuts and vanilla; mix well. Spread into foil-lined 8-inch square pan.
Refrigerate 2 hours or until firm. Cut into 1-inch squares.

EZ yummy fudge recipe my Mother gave me. The hardest part is waiting 2 hours for it to set in the refrigerator. You can substitute the semi-sweet chocolate for milk chocolate, if you prefer, requiring 16 oz. of milk chocolate chips. Also vary the recipe by adding chopped nuts and 2 cups of miniature marshmallows to create "Rocky Road Fudge"...mmmmmm good! I hope you enjoy this.

Steps:

Microwave chocolate and milk in a large microwavable bowl on HIGH 1-3 minutes,stirring after each minute.
Stir until chocolate is completely melted!
Then stir in vanilla (and nuts if you like).
Spread in greased 8 inch square pan.
(I used butter flavored non-stick spray).
Refrigerate until firm.
Cut into squares.
Makes 1 1/2-2 dozen.

Microwave the butter in a large, heatproof bowl on high for 1 minute until it's melted. Then, add in sugar and evaporated milk and mix well. Microwave on high for another 3 minutes. Remove and stir, scraping down the sides of the bowl. Place the bowl back in the microwave and heat it on high for another 5 minutes, or until the mixture comes to a boil. Remove and stir, then microwave the mixture again for 2 more minutes. Carefully remove the hot bowl. Mix in chocolate chips until they're melted. Stir in marshmallow creme, vanilla extract and 1 cup of chopped pecans.
Pour the marshmallow fudge mixture into a lightly greased 9 inch x 9 inch glass dish. Top with the remaining 1 cup of chopped pecans. Allow it to set at room temperature for at least 2 hours
Cut the marshmallow fudge into squares — this recipe makes 16 large squares. Enjoy a square or two for yourself with family. If you're making this recipe as a present, then place the fudge in small baking gift boxes, or wrap them in cellophane. You can cover and chill any leftovers for up to 1 week.
