GERMAN ZWIEBELKUCHEN (ONION PIE)
Zwiebelkuchen is an onion pie from Swabia, in south-central Germany. It is a special time of year, in the fall, when the mom & pop winemakers will open a BasinWirtschaft in their barn or garage. They serve the new wine, fresh zwiebelkuchen, and perhaps some wurst, for a minimal fee. A few tables are set up, and they are open when they have time to serve. To indicate they are serving, they will hang a straw broom over the doorway. The combination of the onions and the 'green' wine can have explosive consequences later on!

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Line a jelly-roll pan or large pizza pan with prepared dough, making sure dough extends up sides of pan.
- Saute onion in a skillet until translucent and pour cooked onion into a large mixing bowl. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, chop and add to onion; mix well.
- Stir in sour cream. Beat eggs enough to break up yolks, then mix in to pie mixture. Add flour to thicken mixture (onions will create a lot of water), then add salt. Mix well and pour mixture into prepared pan. Sprinkle top with caraway seed.
- Bake in preheated oven for about 1 hour, or until onions start to turn golden brown on top.

Steps:
- 1. Dough- Scald milk and add butter, sugar, and salt. Dissolve yeast in warm water in seperate bowl and then add to milk mixture. Beat in eggs and then flour. Cover and let rise until doubled. About an hour. Punch down and divide into 5 pieces. Roll out into desired shape and let rise 30 minutes. Then choose your topping. I used a 9" round cake pan for mine.
- 2. Cinnamon Topping: Use a pastry blender to mix butter and brown sugar and flour. Add cinnamon and sprinkle over dough after it rises the second time. Dot with Butter if desired. Bake at 375 for 20 minutes.
- 3. Cherry Topping: Heat can of dark cherry pie filling and spread on crust after it rises second time. Bake for 20 minutes at 375.
- 4. Cheese Topping; Mix cottage cheese, egg and sugar in blender intil creamy. Heat slowly until warm on stove. Pour on dough after rises second time. Bake at 375 for 25 minutes.
- 5. Butter Topping: Beat together sugar, eggs, and vanilla. Slowly beat in oil. Add oil too fast and it will curdle. Heat on top of stove until hot and pour on crust after second rising. Bake 25 minutes at 375.
- 6. Apple Topping: Peel and slice thinly 3 apples. Sprinkle with cinnamon and sugar and nutmeg to taste. Roll this dough out in a rectangle. Fill the center with apples and dot with butter. Bake 20 minutes at 375.

BROOKLYN BIALY RECIPE(BIALYSTOK KUCKEN)
This was a recipe that originated in Bailystok Poland and brought to New York by Eastern European Immigrants.These were once well known in New York delicatessens ( mainly in Manhattan's Lower East Side) and a favorite of the Jewish community. It's not really known outside of New York because of its short self life which does not lend itself being shipped all over the country. These are similar to a bagel but there is no hole in the middle just a depression which is filled with onion, garlic or poppy seeds. It can be likened to the onion pletzel. Can also be made in different sizes from 3-4 inches to the size of a small pizza.

- Cover two baking sheets with parchment paper and sprinkle lightly with cornmeal. Prepare Onion Topping:.
- In a small bowl, combine vegetable or olive oil, poppy seeds, onions, and salt; set aside, set aside.
- In a large bowl, combine 1/2 cup water, yeast, and sugar; let stand 10 minutes or until foamy.
- Add remaining 1 1/2 cups water, salt, bread flour, and all-purpose flour.
- Knead by hand or with dough hook of mixer for 8 minutes until smooth (the dough will be soft).
- Add flour if you think the dough is too moist , a tablespoon at a time.
- If the dough is looking dry, add warm water, a tablespoons at a time.
- Form dough into a ball and place in a lightly oiled bowl, turning to oil all sides. Cover with plastic wrap and let rise 1 1/2 hours or until tripled in bulk. Punch dough down in bowl, turn it over, cover with plastic wrap, and let rise another 45 minutes or until doubled in bulk.
- On a floured board or counter, punch dough down and roll into a log.
- With a sharp knife, cut log into 8 rounds. Lay dough rounds flat on a lightly floured board, cover with a towel, and let them rest 10 minutes.
- Gently pat each dough round into circles (a little higher in the middle than at the edge), each about 3 to 4 inches in diameter. Place bialys on prepared baking sheets, cover with plastic wrap, and let rise an additional 30 minutes or until increased by about half in bulk (don't let them over-rise).
- Make an indention in the center of each bialy with two fingers of each hand, pressing from the center outward, leaving a 1-inch rim.
- Place approximately 1 teaspoon of Onion Topping in the hole of each bialy.
- Dust lightly with flour, cover with plastic wrap, and let rise 15 minutes.
- Preheat oven to 425 degrees F.
- Bake on upper and lower shelves of the oven for 6 to 7 minutes, then switch pans and reverse positions of pans (front to back), and bake another 5 to 6 minutes until bialys are lightly browned.
- NOTE: These are soft rolls, and it is important not to bake them too long or they will be very dry.
- Remove from oven and let cool on wire racks.
- After cooling, immediately place in a plastic bag (this will allow the exterior to soften slightly).
- NOTE: These rolls are best eaten fresh, preferably lightly toasted and smeared with cream cheese. For longer storage, keep in the freezer.
- Makes 8 bialys.

- 1. I use a 9" springform pan, greased sides and bottom. My grandpa used a cast iron skillet.
- 2. Stir yeast into the warm milk with 1 1/2 teaspoons of sugar. Let it foam. Then add to warm half/half or warm cream.
- 3. Slightly beat the yolk with a fork. Combine the flour, salt, butter, yolk and remaining sugar in bowl. Mix well. Add the yeast mixture and mix well. Refrigerate in a covered bowl. The next day take the dough out of the refrig. and let it rest to warm sightly to room temp. Beat the egg white till it well foamed, just before it starts to peak. Fold in the batter.
- 4. Topping: Cook the bacon until crisp, drain, and crumble it. Set aside. Melt butter or use the bacon greased in a skillet on high heat, do not brown the butter. When hot add the onions, turn down heat and cook until soft and slightly golden. Add the flour and mix it well to incorporated into the onions and butter. Transfer onions to a bowl and cool.
- 5. In another bowl add the eggs, salt, and nutmeg and beat until foamy. Add the onions. Add the bacon on top.
- 6. Roll the dough out on a lightly floured surface. Place in pan and let rest for 30 minutes. Place dough in well greased pan and add the topping. Bake in center oven at 375* for about 50 minutes or until golden brown.
