GLACEED ORANGE SLICES
Glaceed orange goes with the bittersweet chocolate in the fondue. It can also turn a simple dish of ice cream into a special occasion.

Steps:
- Leaving peel on, cut oranges into 1/4-inch rounds, then cut each round into a half-moon.
- Bring sugar and 2 cups water to a boil in a large pot, stirring occasionally, until sugar dissolves. Wash down sides of pot with a wet pastry brush to prevent sugar crystals from forming. Add orange slices to boiling syrup; reduce heat. Cover with parchment, and gently simmer until orange slices are soft and glazed, about 1 hour and 45 minutes.
- Using a slotted spoon, transfer peel to a wire rack set on a rimmed baking sheet. Let dry until just slightly tacky, about 5 hours. Store in an airtight container for 2 days.

This glaze is fresh and delicious. It uses real orange juice, not the stuff out of the container. It adds a real nice kick to angel food cake or any kind of loaf cake.

- In a small saucepan, simmer the ingredients for the glaze (honey + juice) until thickened and reduced by half. BE CAREFUL! The glaze bubbles up and boils over easily. Keep an eye on it. COOL COMPLETELY.
- Hull the stems off the strawberries, then quarter (cut into 4 pieces). Place in a large bowl. Add the blueberries.
- Cube the pineapple. Cut the top and bottom off of the pineapple. Cut off the skin. Make four cuts around the core; then discard the core. Cut each piece in half width-wise first, then into 1-inch strips, and then into 1-inch chunks. (For a step-by-step tutorial, read this post.) Add pineapple to the bowl.
