- Place roast on a rack in a shallow roasting pan. Bake, uncovered, at 350° for 45 minutes. , Meanwhile, in a large skillet, saute onions in 1 tablespoon of butter for 1 minute. Add orange juice and bay leaf; cook and stir over medium-high heat until thickened, about 4 minutes. Add the cranberry sauce, broth, pecans and vinegar; cook and stir until slightly thickened, about 5 minutes. Reduce heat; stir in the salt, pepper, sugar and remaining butter until butter is melted. Discard bay leaf. , Remove 1/4 cup sauce and stir in preserves; spoon over roast. Set remaining sauce aside. Bake 20-25 minutes longer or until a thermometer reads 145°. Let meat stand for 10 minutes before slicing. Serve with reserved sauce.

Steps:
- 1. Preheat oven at 325.
- 2. Saute' roast on all side is amall amount of hot oil in skillet.
- 3. Remove from skillet and place in a shallow roasting pan.
- 4. In a skillet, saute' onions and garlic in oil until tender.
- 5. Add the marmalade, pecans and cinnamon; cook and stir until marmalade is melted.
- 6. Spoon hot mixture over roast.
- 7. Bake uncoveed for 1-1/3 hours or until meat thermometer reads 160.
- 8. Remove from oven and let stand for 10 minutes before slicing.

- Preheat oven to 350°. Combine the first 5 ingredients; rub over roast. Place fat side up on a rack in a shallow roasting pan. Bake, uncovered, for 1 hour. , Meanwhile, in a saucepan over medium heat, combine orange juice, brown sugar and mustard. In a small bowl, mix water and cornstarch until smooth. - Place roast on a rack coated with cooking spray in roasting pan. Rub roast with salt and pepper and set aside.
- Heat marmalade in microwave on high 10 seconds or till melted. Add mustard and rosemary, stirring till blended. Brush mixture over roast.
- Bake at 425°F for 45 minutes (or until meat thermometer registers 155 degrees).
- Remove roast from pan, cover with foil and let stand for 10 minutes. Meanwhile, place roasting pan on stove top over medium heat and sprinkle flour over juices. Gently and constantly whisk and cook for 1 minute.
- Add broth, and cook 5 more minutes, whisking constantly until mixture thickens. Serve with sliced pork.

- Make the stuffing: combine the cranberries and liqueur in a small saucepan; bring to a boil over med-high heat; remove from heat and set aside.
- Brown sausage in a big skillet; stirring to crumble; drain, reserving 2 tablespoons drippings in skillet; set sausage aside.
- Add celery and onion to reserved drippings; cook over med-high heat for 10 minutes, stirring constantly.
- Add in butter and the next 4 ingredients; cook/stir 3 minutes or until butter melts.
- Combine the cranberry mixture, sausage, stuffing mix with its seasoning packet, orange rind, and pecans in a big bowl; stir well to combine.
- Reserve 2 cups stuffing for the pork roast; spoon remainder into a lightly greased 13x9 inch baking dish; cover and bake in a preheated 350° oven for 20 minutes; uncover and bake 10 more minutes or until lightly browned.
- Make the roast: combine the first 3 ingredients; rub over all sides of the roast.
- Fold a piece of foil into an 8-inch square; place on a rack in a roasting pan.
- Place roast, bone ends up, on foil-lined rack.
- Bake in preheated 350° oven for 1 hour.
- Spoon the reserved 2 cups stuffing into center of roast; cover with a 12-inch square of foil and fold over tips of ribs.
- Bake at 350° for 1 ½ hours or until a meat thermometer reads 160°.
- Remove foil; let roast stand 15 minutes before slicing.
- Pour pan drippings into a skillet; add in butter and cook over medium heat until butter melts.
- Add in flour, whisking until smooth; cook, whisking constantly, until caramel colored.
- Stir in chicken broth and next 4 ingredients; cook, whisking constantly, until smooth and thickened; serve with roast.
- Garnish, if desired.

ORANGE PECAN FRENCH TOAST
My husband and I were vacationing recently and had this lovely French toast at a bed and breakfast. When we came back home, I kept missing it so I called them up and requested it. They actually gave me the recipe over the phone! I generally halve the recipe for my husband and I, and bake it in an 8 inch square pan. Reheats well in the toaster oven. I served it to my in-laws recently and they loved it. Serve with a little sweetened whipped cream and berries!

- In a small bowl, stir together the brown sugar, melted butter, and corn syrup. Pour into a greased 9x13 inch baking dish, and spread evenly. Sprinkle pecans over the sugar mixture. Arrange the bread slices in the bottom of the dish so they are in a snug single layer.

PECAN-COATED ROAST LOIN OF PORK

- Rub the pork loin with olive oil, making sure that it is well covered. Combine the sage, thyme, garlic, salt, pepper and brown sugar in the bowl of a food processor or blender and pulse until you have a thick paste. You may have to add a drizzle of olive oil to get it started. Slather the paste all over the pork loin, cover it with plastic wrap, and refrigerate it over night.
- Preheat the oven to 400 degrees. Place the pecans in the bowl of a food processor or blender and pulse until they are finely chopped. Roll the pork loin in the crushed pecans and place it in a roasting pan. Make a tent of aluminum foil and arrange it over the pork loin, covering the nuts completely so they won't char.
- Roast for 30 minutes; then lower the heat to 350 degrees and continue to roast. After 1 hour and 20 minutes, remove the aluminum foil and continue to roast until the pork is done, approximately 20 minutes more. Serve hot.
