GRAND MARNIER GRILLED ORANGES

Steps:
- Place orange slices in a shallow dish and cover with the booze.
- Turn a few times to coat and chill 1 hour up to 6.
- (I use a freezer bag) Grill orange slices, brushing with reserved marinade for 3-4 minutes on each side.
- Serve hot with vanilla ice cream like this.
- 1 small dollop of ice cream in the bottom of a glass, 1 slice orange, 1 dollop, 1 or 2 slices orange and drizzle a spot of fresh booze on top or left over marinade.
- You can use a sprig of mint if you like.
- Serve.
ORANGE JUICE AND GRAND MARNIER MOUSSE

Steps:
- Combine one-half cup of sugar, one-half cup of the cold water and the orange rind in a saucepan and bring to the simmer. Add the gelatin and stir to dissolve.
- Add the orange juice and bring to the simmer.
- Combine the cornstarch and the remaining two tablespoons of water and stir the mixture into the simmering liquid.
- Pour and scrape the mixture into a mixing bowl and cool briefly.
- Put the egg yolks in a separate bowl and add about one-quarter cup of the hot liquid to the yolks. Beat briskly and pour and scrape this mixture into the same mixing bowl, beating with a wire whisk. Beat in the Grand Marnier. Set aside until cool.
- Put the egg whites in one large bowl and the cream in another.
- Beat the whites until they are almost stiff and add three tablespoons of sugar. Continue beating until they are stiff.
- Beat the cream until it is almost stiff and add the remaining sugar. Continue beating until it is stiff.
- Add half of the whites to the egg- yolk sauce and beat them in. Add the remaining whites, folding them in gently. Fold in the cream. Chill until it is set.

- In a medium saucepan, mix the sugar, cornstarch and the salt.
- Gradually whisk in the orange juice and cook over medium heat until the sauce has thickened and is transparent, about 3 minutes.
- Remove from the heat and add the butter and Grand Marnier.
- Serve warm or cold.

- The syrup is made first. Place the sugar and water into a medium sized saucepan and stir over a low heat until the sugar is dissolved. Bring to a boil, and, without stirring, boil uncovered for 2 minutes.
- To segment the orange you need a very sharp knife.Trim both ends off the orange to create a flat, stable surface.Stand the orange on one end. Remove the orange peel and white pith by starting at the top and moving your knife downward along the contour of the orange. Remove just enough to show the orange flesh.To cut the oranges into segments, carefully slide your knife as close as possible to the membrane. When the blade reaches the centre of the orange remove the knife, cut along the membrane on the other side and remove the segment. Do this over the bowl in which you’re placing the segments, so that none of the precious juice is lost. Squeeze the remaining portion of the orange over the same bowl to remove the remaining juice.
