ORKNEY BROONIE

Brunnie (Shetland) and Broonie are both derived from the Old Norse word which refers to a thick bannock. This is a lovely light gingerbread, gorgeous with a cup of hot milky tea on a dark Scottish winter's night.

Steps:

  • Preheat oven 170°C.
  • Combine oatmeal,salt and flour.
  • Rub in butter,stir in sugar and ginger.
  • In a small saucepan heat treacle gently,stir in egg. Pour into dry ingredients add buttermilk and stir thoroughly until all are well combined.
  • Pour batter into a buttered 900g/2lb loaf tin.
  • Bake 60-70 minutes until knife inserted in centre comes out clean.
  • Cool on a wire rack and cool COMPLETELY before turning out.

175 g medium oatmeal
175 g self-raising flour (sifted)
1 pinch salt
85 g unsalted butter, cubed
1 tablespoon ginger, heaping
85 g light muscovado sugar
2 tablespoons black treacle
1 free-range egg, beaten
150 ml buttermilk

CHEWY OATMEAL BROWNIES

I promised my daughter I could make yummy brownies WITHOUT a box mix! When I went looking for a recipe, I wanted "something" nutritionally "good" in the recipe. This is what we came up with. Its a chewy, chocolatey brownie you can dress up with nuts, chips, marshmallows or m&m's.

Steps:

  • Combine sugar, eggs and vanilla with a fork.
  • Combine dry ingredients (up to oats) in separate bowl.
  • Mix wet and dry ingredients together well with fork.
  • Stir in nuts.
  • Spread batter evenly in a greased 8 x 8 pan.
  • Bake at 350 degrees for 30 minututes.

1/2 cup butter (melted)
1 cup sugar
2 eggs (beaten)
2 teaspoons vanilla extract
1/2 cup flour
1/2 cup cocoa
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup oats
1/2 cup chocolate chips or 1/2 cup marshmallows (you can use up to 1 cup of these combined if you want to be fancy) (optional)
