CITRUS MARINATED OLIVES

Steps:
- Drain the olives of any brine and rinse thoroughly with cool water. Cover in cool water and allow to soak for at least 5 minutes and up to 5 hours.
- In a 1 to 1 1/2-quart container combine the garlic, olive oil, vinegar, lemon zest and juice, red pepper flakes, tarragon, and curry powder. Add the olives and stir or shake to combine. Make sure the olives are submerged in the marinade.
- Allow to sit in a cool dry place for 1 day. Place in the refrigerator for another day or 2 before serving.
CITRUS OVERNIGHT OATMEAL
Packed with protein and vitamin C, this easy make-ahead breakfast recipe was inspired by a childhood favorite, the Orange Julius. My "grown-up" but kid-friendly version is equally delicious, albeit a bit healthier, I imagine, with pure orange juice, egg white protein powder, fresh oranges and a sprinkle of sliced almonds.

- Combine the oats, orange juice, egg white powder and 1/8 teaspoon salt in a glass Mason jar or bowl, and cover. Refrigerate overnight.
- The next morning, peel and chop the orange. Stir the oatmeal mixture, then top with chopped fresh orange and sliced almonds.

- Mix all ingredients together in a small bowl. Transfer to an airtight container and cover; let stand at room temperature for at least 4 hours and up to overnight. Sugar may be kept, covered and refrigerated, for up to 2 weeks.
CROCK POT CITRUS GINGER CHICKEN
This is one of my favorites. The flavor is best if you marinate the chicken in the sauce overnight or freeze in the sauce and thaw in the fridge overnight before cooking. This can also be baked in the oven in around 30 minutes. Serve over a bed of aromatic rice such as jasmine or basmati rice with a mix of steamed vegetables on the side.

Steps:
- Combine marmalade, lime juice, pineapple, soy sauce, mustard, ginger, cayenne, garlic and sugar in a gallon size zip lock bag.
- Cut chicken into serving size pieces and add to the sauce. Refrigerate overnight or freeze.
- To thaw, place in fridge overnight.
- Empty contents of bag into your crockpot and cook on low for 6-8 hours or high for 4-6 hours.
- You can also bake this in a 350 degree oven for 25-30 minutes or until juices run clear.
- If the sauce is too runny when cooked in a crockpot, mix 2 teaspoons cornstarch and 2 tablespoons of water and stir into the sauce. Cook on high until thickened.

- In the bowl of a stand mixer fitted with the whisk attachment, beat the egg yolks, whole egg, sugar, butter, and buttermilk. Add approximately 2 cups of the flour along with the yeast and salt, whisking until moistened and combined. Remove the whisk attachment and replace with a dough hook. Add 1 1/4 cups of the remaining flour and knead on low speed for 5 minutes. Check the consistency of the dough and add more flour, if necessary; the dough should feel soft and moist but not sticky. Knead on low speed until the dough clears the sides of the bowl, about 5 minutes more. Turn the dough out onto a lightly floured work surface and knead by hand for about 30 seconds. Lightly oil a large bowl. Transfer the dough to the bowl, lightly oil the top of the dough, cover, and let double in volume, 2 to 2 1/2 hours.
- Combine the sugar, lemon zest, fresh ginger, candied ginger and 1 cup flour in a medium bowl. Mix until well combined. Set aside until ready to use.
- Lightly grease a baking sheet and set aside. Turn the dough out onto a lightly floured surface. Roll into a 12-by-24-inch rectangle. Brush 2 tablespoons of melted butter onto the dough and sprinkle the filling over the dough, pressing the filling lightly so it sticks to the dough. Beginning with the long edge nearest you, roll the dough into a tight cylinder. Brush the beaten egg along the edge for a secure seal. Firmly pinch the seam to seal and roll cylinder seam-side down. Brush the 2 ends with a little of the beaten egg and bring together to shape into a ring and firmly press together. Place on the baking sheet, cover with plastic wrap, and refrigerate overnight or up to 16 hours.
- Remove the ring from the refrigerator, remove the plastic wrap, and snip the top with scissors every 2 inches. Place in an oven that is turned off. Fill a shallow pan 2/3 full of boiling water and set on the rack below the ring. Close the oven door and let the dough rise until the ring looks slightly puffy, approximately 30 minutes. Remove the ring and the shallow pan of water from the oven.
