Use creme fraiche as a substitute for sour cream or as a sophisticated alternative to whipped cream.

Homemade Creme Fraiche image

Steps:

  • Pour cream and buttermilk into a 2 1/2-cup jar with a lid. Replace the lid, shake well, and allow mixture to rest at warm room temperature overnight. Refrigerate for at least 24 hours before using; the mixture will reach its optimal thickness after 4 or 5 days.

1 1/2 cups heavy cream
1/2 cup low-fat buttermilk, (1 percent to 2 percent)

OVERNIGHT CREME FRAICHE

Creme Fraiche has a very tangy taste and a lighter texture than sour cream. You can buy it in stores many places, but if not, just make your own. I like this as a substitute for sour cream in dessert recipes because I think commercial sour cream can add a harsh edge to some of the more delicate pastry items.

Overnight Creme Fraiche image

Steps:

  • Whisk together the cream and sour cream until smooth.
  • Cover the bowl with cheesecloth or a thin kitchen towel and let sit at room temperature (around 68 degrees) until it thickens.
  • This will take at least 12 and up to 24 hours.
  • Stir until smooth and refrigerate.
  • The creme fraiche will stay fresh for several weeks.
  • As it ages it will give off some water liquid.
  • Either stir it back into the creme fraiche or spoon it off and discard it.

Overnight Creme Brulee French Toast Recipe image

Steps:

  • In a small saucepan melt butter, brown sugar, and corn syrup over medium heat until smooth, stirring occasionally.
  • Pour mixture onto large, greased jelly roll pan (18x13x1"). Spread around to cover surface.
  • Place 12 slices of bread in a single layer to cover pan.
  • Mix together eggs, cream, salt, vanilla, and cinnamon. Spoon mixture over each piece of bread. Cover and refrigerate overnight.
  • Bake uncovered at 350 degrees for about 25-30 minutes. Remove from pan and serve.
  • Top with syrup, whipped cream, fresh fruit, powdered sugar, or topping of choice.

Lighter crème brûlée image

Steps:

  • Stir 2 tbsp of the sugar, the custard powder and cornflour in a medium bowl with 2 tbsp of the milk to make a smooth paste. Beat in the egg yolks with a fork until well combined. Pour the remaining milk into a pan, preferably non-stick, then pour in the cream. Slit the vanilla pod lengthways and scrape the seeds into the milk. Drop the pod into the pan and bring the creamy milk just to the boil - as soon as you see a few bubbles rising to the surface, remove from the heat.
  • Slowly pour and stir the hot milk into the cornflour mix, including the vanilla pod, making sure the yolks are well blended in. Transfer to a clean pan. Cook over a low heat, stirring continuously with a wooden spoon, for about 15-20 mins until the mixture is very thick - when you drag the spoon across the bottom of the pan, it should leave a clean line. It should be much thicker after about 10 mins, but keep stirring until the mixture has thickened sufficiently to look like softly whipped cream or mayonnaise. Keep adjusting the heat so that the mixture does not come to the boil or overheat, as it may curdle and become lumpy. If this happens, beat the mixture smooth with a wire whisk.
  • Remove from the heat, transfer to a bowl and leave to cool for 15-20 mins, stirring occasionally to prevent a skin from forming. Remove the vanilla pod. Stir in the crème fraîche and divide the mixture between 4 small ramekins (about 125-150ml capacity each). Spread the mixtures level, then chill, uncovered, overnight. By not covering them, a thin skin can form on top of the brûlées, which will help support the caramel layer.
  • Before serving, spoon the remaining sugar over the top of each brûlée (allow 1½ tsp per ramekin) and smooth over with the back of the spoon. To caramelise, use a blowtorch. Hold the flame just above the sugar and keep it moving until evenly caramelised (don't take too long or you will heat up the custard too much). If the custard looks as though it has softened slightly, put the ramekins in the fridge for 5-10 mins to firm it up again. Serve while the caramel is still brittle.

  • Melt butter, brown sugar and Karo over medium heat in a small saucepan. Stir until smooth.
  • Pour mixture in a 13x9 casserole dish. Place bread on top, squeezing it in if you need.

Crème Fraîche image

Steps:

  • Combine the heavy cream with the buttermilk or crème fraîche starter. Pour into a clean, warmed thermos or glass jar. Cover tightly and keep in a warm place for 6 to 8 hours. If using crème fraîche starter, keep covered for 24 hours. When the mixture has jelled and is almost firm, refrigerate. It will solidify further in the refrigerator.
  • This amount, if made with Solait crème fraîche starter, will keep for a month in the refrigerator. If made with buttermilk it will keep for 10 days.
  • To make more crème fraîche, use 2 tablespoons from the last batch and add it to a cup of cream. You can continue making more this way. After six months or so, a slightly fermented taste may develop, in which case it is time to start a new batch.
