Steps:
- Simmer oysters in their own liquor until the edges curl.
- Drain and chop finely.
- Cook sausage meat, stirring while cooking.
- Combine chopped oysters, fried sausage meat and half the beaten eggs.
- Season with salt and pepper and shape into balls.
- Dip balls into remaining egg and roll in cracker crumbs.
- Fry in deep hot fat (380F) until golden brown.
- Garnish with sliced lemon and dill pickle.

SMOKED OYSTER BALL
This is a different appetizer that most people ( those who like smoked oysters!) really enjoy!I've made this with the 1/3 fat and fat-free chream cheese and can't really tell the difference! Chill time is not included in prep time.

Steps:
- Combine all ingredients except the parsley in the bowl of a food processor and pulse until well blended.
- Wrap mixture in plastic wrap and refrigerate until well chilled.
- Remove from plastic wrap, roll in chopped parsley, and serve with your favorite crackers or pita chips ( the garlic ones are good with this!).

Steps:
- Heat oven to 350°F.
- Fry bacon lightly sprinkled with brown sugar, watch carefully, so not to burn. Drain, crumble and set aside
- In a small bowl, mix by hand, the bacon, oysters, stuffing, seasonings if using and water, adding more water if too dry or more stuffing if too wet.
- Using a tablespoon, hand shape into balls. Place balls onto a rack on a foil lined baking sheet.
- Bake 10 - 20 minutes, watching after 10 minutes for too much browning, ovens vary. Remove and serve.

- In a small frying pan on medium heat, cook onion. After onion begins to soften, add celery, green pepper and carrot and cook until all are softened. Set aside.

- Cook rice according to package directions. Spread in 13 x 9-in. (3 L) baking dish to cool. Meanwhile, in microwaveable bowl, stir rice vinegar with sugar and salt. Heat 30 sec. to 1 min. or until steaming. Stir until sugar and salt are dissolved. Toss rice with mixture; cool completely.
- Place sesame seeds in shallow dish. Using wet hands, divide rice into 12 portions and roll into balls. Flatten each rice ball. Place an oyster in the centre. Seal oyster in rice and re-shape into ball. Roll in sesame seeds to coat. Repeat for 12 balls. Set aside.
