SAUSAGE AND OYSTER STUFFING

This is the stuffing recipe for the turducken. Chicken broth, beer, or water can be used in place of turkey broth.

Steps:

  • Place sausage in a large, deep skillet. Cook and crumble over medium high heat until evenly brown.
  • In a large bowl combine the dry bread stuffing with the sausage and pan juices. Stir in the oyster pieces and liquid, chopped celery, chopped onion, and butter.
  • Add the broth/liquid a little at a time until the dressing is moist but not soggy. Season to taste with salt, pepper and Creole seasoning. Refrigerate until cold and stuff in turducken.

16 ounces unseasoned dry bread stuffing mix
2 (8 ounce) cans oyster pieces, liquid reserved
2 cups chopped celery
1 onion, chopped
4 tablespoons butter, melted
1 ½ cups turkey broth

Creole seasoning to taste

Oyster Dressing (Stuffing) image

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a 2 quart casserole dish.
  • Heat the oil in a large skillet over medium-high heat. Add celery and onion; cook and stir until tender, about 5 minutes. Mix in the bread crumbs and parsley and remove from the heat. Add the oysters and eggs, and season with salt, pepper, poultry seasoning and thyme. Stir in enough liquid from the oysters to moisten and mix everything thoroughly. Transfer to the casserole dish.
  • Bake in the preheated oven until the top is toasted and a knife inserted into the center comes out clean, about 45 minutes.

Steps:

  • Preheat oven to 360. Spray a baking dish with cooking spray. Set aside. Heat a large skillet over med-high heat. Add sausage, cook until browned. Using a slotted spoon, remove sausage, reserving rendered fat in pan. Add onions, celery, bell pepper and garlic to pan. Cook until tender, stirring often about 5-6 min. Add seasonings and cook another 2 minutes. In large bowl combine cornbread, stuffing, sausage, onion mixture, eggs, broth, soup and oysters, gently folding until well combined. Pour into prepared dish. Bake, uncovered, until top is golden brown and dressing is firm to the touch, about 45 minutes.

1/4 pound package Neese's sausage with sage
1 cup onion, chopped
1/2 cup celery, sliced
1/4 cup green and or red bell peppers, chopped
1/2 tablespoon fresh garlic, chopped
1/2 teaspoon dried sage
1/2 teaspoon poultry seasoning

  • Preheat oven to 375°. Place soup mix in a bowl; add boiling water and let stand for 5 minutes. In a Dutch oven, melt butter. Stir in bread cubes and onion soup mixture. Cover and cook over low heat for 5 minutes, stirring occasionally. Steps:

  • Melt butter in skillet, add celery and onion and mushrooms. Sauté till crisp/tender.
  • Meanwhile, break sausage into pieces and brown in a separate skillet over med heat.
  • Put Stuffing mix into a large bowl.
  • Add the celery, onion and sausage.
  • Chop oysters and add. Add as much of the juice as you like.
  • Moisten with chicken broth, add more or less according to your liking.
  • Put in buttered loaf pan and bake for about 25 min at 350°F.

Steps:

  • Heat oven to 450°F. Make and bake cornbread mix as directed on package, using water. Cool 30 minutes; crumble cornbread into large bowl. Reduce oven temperature to 350°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. In 10-inch skillet, melt butter over medium heat. Cook celery and onion in butter 10 minutes, stirring occasionally, until tender. Stir in sage, pepper and salt.
  • Add celery mixture and bread cubes to crumbled cornbread; stir gently. Add broth and eggs; stir just until moistened. Stir in oysters. Spoon mixture into baking dish.
